Enjoy a simple and beautiful Italian antipasto platter this summer! With fresh garden fruit, cured meat, cheeses, and bread, this Charcuterie Board is so delicious, easy to put together, and fun to eat!

Who doesn’t love a charcuterie board?? I’ve yet to meet one I didn’t immediately gawk over. They’re so gorgeous, and really just the perfect way to display a variety of finger foods. Always a crowd please, whether small or large.

When Galbani® reached out to me to gauge interest in partnering up, it took me all of .00005 seconds to think about it, and then maybe another minute to know I would put their wonderful fresh mozzarella to use in an antipasto charcuterie board, because I will take any excuse to make a cheese board!

Galbani’s fresh mozzarella products are all natural, with no whiteners or preservatives added, crafted from cow’s milk into a semi-soft cheese that is simply wonderful. It’s no surprise they are Italy’s #1 cheese brand and thank goodness their variety of fresh mozzarella is available in the United States, too!

Cheese and Charcuterie boards are truly an art form, and yet they are so easy (and fun!) to assemble.

What is included on this antipasto Charcuterie Board

When creating my meat and cheese board, I didn’t want anything cooked that would need to be kept warm. Summer is hot enough! I also wanted everything to compliment the Galbani fresh mozzarella, because that is the star of the show.

  • Cheese – Galbani marinated fresh mozzarella balls (ciliegine) and salad pearls
  • Cured meats – prosciutto and salami
  • Fruit – cherry tomatoes, peaches, and cantaloupe melon
  • Bread – a baguette that I sliced, drizzled with olive oil, and toasted in the oven
  • Almonds – roasted and salted
  • Olives – I used Kalamata, but any olives would be great
  • Greens – some baby arugula and fresh basil leaves
  • Balsamic glaze – this is reduced balsamic vinegar. A little drizzle is the perfect touch on fruit, cheese, and herbs

All of these ingredients pair so well together in both taste and texture, and the color combination is a feast for the eyes!

How To Build This Board

There are no rules to building your board, but there is a slight process to make it easy.

  1. Put your fresh mozzarella, almonds, and olives in small Ramekins or shallow dishes, and place those on the board first.
  2. Then add any meats.
  3. Next, fill in pockets with the fresh fruit.
  4. Have your bread (or crackers) around the border.
  5. If forming caprese skewers like I did, have those on the edge, not the center.
  6. Serve immediately or chill until ready to serve. And don’t forget to include toothpicks and napkins!

When you’re organizing your board, think about placing light colored items next to darker colored ones, softer foods next to crunchier ones, and try to keep the foods somewhat on the same level, so one food doesn’t tower over another. But mostly, have fun with it!

This is truly the best addition to any get together. Italian finger foods are always a hit with everyone and you can’t ever go wrong with Galbani fresh mozzarella!

Entertain with a simple Italian antipasto Charcuterie Board! This platter is so delicious, easy to put together, beautiful to look at, and fun to eat!

Ingredients 

  • 8 ounce container Galbani marinated fresh mozzarella balls (ciliegine)
  • 8 ounce container Galbani fresh mozzarella salad pearls
  • 3 ounces almonds, , roasted and salted
  • 2 ounces Kalamata olives
  • 3 ounces prosciutto
  • 4 ounces salami
  • 2 pints cherry tomatoes
  • 2 ripe peaches, , sliced
  • 1/2 medium cantaloupe melon, , scooped into balls
  • 1 baguette, (drizzled with olive oil, tossed with Italian seasoning and toasted in the oven)
  • 2 tablespoons balsamic glaze
  • handful of baby arugula and fresh basil leaves

Instructions 

  • Put your mozzarella, almonds, and olives in small Ramekins or shallow dishes, and place those on the board first.
  • Then add the prosciutto and salami.
  • Next, fill in pockets with the fresh cherry tomatoes, sliced peaches, and cantaloupe balls.
  • Place the bread around the border.
  • Assemble the caprese skewers and place those on the edge, not the center. The drizzle with the balsamic glaze.
  • Garnish with baby arugula and fresh basil leaves.
  • Serve immediately or chill until ready to serve. And don’t forget to include toothpicks and napkins!

  • For reference, the board I used is 12 by 16 inches.
  • This board with ingredients listed feeds 6-8 people as an appetizer, but can vary depending on your guests and how much each person eats. Use this as a rough guide.
