I once saw charcuterie boards described as adult Lunchables and it makes sense why they have become so popular and trendy in recent years. They’re just so fun, so snacky, and so versatile. Amy has made several variations before, including an Italian antipasto charcuterie board and a Christmas tree charcuterie board. This spring charcuterie board is inspired by her fall charcuterie board, utilizing the produce and flavors most commonly available in the spring. I love to serve this as a snack or appetizer for friends but it would also be great for a picnic!
Helpful Tips & Tricks
- Start with the bigger ingredients. When assembling, start with larger, bulkier items (spreads and cheese) and layer in smaller ingredients around them.
- Group things together. Group similar items together, such as the meats or crackers, to make it easier for guests to pick and pair.
- Keep the meat and cheese separate. To prevent the flavors from mixing too much, try to arrange meats like salami and chorizo away from cheeses. This will ensure that each item maintains its individual flavor and texture.
- Bring ingredients to room temperature. Bring cheeses, spreads, and meats to room temperature about 30 minutes before serving to enhance their flavors. Cold cheeses and meats can be firm and less flavorful.
- Keep the crackers and bread fresh. To avoid soggy crackers, add them just before serving. For the bread, toast it lightly right before serving so it stays nice and crispy.
- What board should I use? A large wooden board or platter is perfect for that rustic vibe. If you don’t have one, a marble slab, tray, or even a flat surface with parchment paper will work just fine.

Spring Charcuterie Board
Ingredients
Fresh Produce
- 1 cup snap peas , trimmed and whole
- 6-8 radishes , thinly sliced
- 1 English cucumber , sliced
- 6-8 rainbow carrots
- 1 cup assorted sweet Peppers , sliced into half or whole
- 1 cup fresh berries (such as strawberries, blackberries)
Cheese
- 4 ounces honey goat cheese , drizzled with honey
- 4 ounces brie cheese , cut into wedges
- 4 ounces aged gouda cheese , sliced
Meats
- 4 ounces salami , folded
- 4 ounces dried chorizo , thinly sliced
Nuts
- 1/2 cup pistachios
- 1/4 cup almonds
- crackers & bread
- 1-2 cups multigrain crackers
Spreads & Dips
- 1/4 cup herb & garlic hummus
- 1/4 cup orange marmalade
- 1/4 cup mashed avocado
Herbs
- sprigs of thyme
Instructions
Bowl placement
- Place small bowls of spreads first. Position the herb & garlic hummus, orange marmalade, and mashed avocado in three separate areas of the board. These bowls should be spread across the board for balance and easy access.
Cheese placement
- Arrange the Honey Goat Cheese in the center or toward the corner of the board. You can drizzle it with a little honey for extra visual appeal.
- Place the Brie Cheese wedges in a fan-like arrangement, making sure they are easy to pick up.
- On the other side of the board, scatter slices of Aged Gouda to create another visual zone.
Meat arrangement
- Neatly fold the Salami and place them next to the gouda cheese. This adds visual interest and keeps the meat section compact.
- Lay the Dried Chorizo slices in a slightly scattered formation next to the brie cheese, ensuring they don’t overpower the other ingredients.
Layering the fresh produce
- Begin by arranging the Snap Peas in a section of the board for a crunchy and vibrant touch.
- Fan out the thinly sliced Radishes in a colorful arc, spreading them out around the vegetables.
- Lay the Cucumber slices in a clean, uniform look.
- Place the Rainbow Carrots either whole or cut into small sticks for a playful touch, arranging them in clusters.
- Scatter the Assorted Sweet Peppers, keeping them grouped together in a visually appealing way.
- Add the Fresh Berries as a final colorful highlight, placing them near the corners or filling in any remaining gaps.
Nuts & crackers arrangement
- Scatter the Pistachios and Almonds around the board in little piles for a crunchy contrast to the creamy and savory elements.
- For the multigrain crackers, arrange them in a loose stack along the edges or interspersed between other ingredients, allowing space for guests to grab them easily.
Finishing touches
- Add a few extra sprigs of fresh herbs, like thyme or rosemary, to brighten the board and bring it all together visually.

How Much Food Should I Prepare For Each Person?
I think deciding how big of a charcuterie board to make is one of the hardest parts! A good rule of thumb is about 3-4 ounces of cheese per person, 2 ounces of meat, and 1-2 ounces of nuts and crackers. You can adjust based on whether it’s the main snack or part of a bigger meal. This spring charcuterie board, using the amounts in the recipe card, serves 4 to 6 people as a main snack.
Serving Suggestions
One of my favorite things about charcuterie boards is that it’s ready to serve once assembled. I do like to include small spoons for the spreads but otherwise, it’s great to just let the guests pick over the board as desired.
While I do think some of the ingredients are best at room temperature, ideally, a charcuterie board should be out for no more than 2 hours at room temperature, or just 1 hour if the room is over 90°F.
Make Ahead & Storage
- Make ahead. You can prep most of the board up to 24 hours ahead of time. To keep things fresh, though, add delicate items like fresh berries and herbs right before serving. Just store the board in the fridge, covering it loosely with plastic wrap or a damp cloth.
- Leftovers. Cover any leftovers with plastic wrap and refrigerate. Most ingredients will stay good for an additional day or so, as long as they haven’t been left at room temperature for too long. The mashed avocado is usually the first thing to brown, while the cheese and meat last the longest.
