Baked Spinach Frittata

Egg frittatas are a great option when you need something quick and easy but aren’t sure what to make. Baked frittatas like this one are classy enough to share with guests but, including bake time, are ready in under 30 minutes. They’re perfect for breakfast, brunch, or dinner and because they’re filled with veggies, meat, and cheese, there’s no real need for extra side dishes either.

What’s the Difference Between a Frittata and a Quiche?

Frittatas and quiche are very similar – they are both essentially egg pies filled with meat, cheese, and vegetables, and baked. The biggest difference is that a quiche is made in a pie crust, while a frittata is crust-free – this also (usually) makes it gluten free depending on the other ingredients.

Ingredients Needed

This easy egg frittata is made with just a few ingredients – many of which you would typically add to an omelet.

  • Eggs – Our star ingredient. Can’t make an egg frittata without eggs.
  • Ham – This is a great way to use up leftover ham!
  • Baby spinach – I prefer fresh spinach in my egg frittatas.
  • Garlic – Use fresh, for best flavor.
  • Cheddar cheese – Or any cheese of preference.
  • Half and half – This is simple equal parts whole milk and heavy cream. (See notes below for substitutions.)
  • Olive oil – Used for sautéing the vegetables.
  • Salt & pepper

Can I Use Skim Milk Instead of Half and Half?

If you substitute the half and half for 2% or skim milk, there’s not enough fat to bond the liquid to the egg proteins, and it will become very watery. Instead, you can use whole milk or heavy cream without it becoming watery.

Can This Be Made With Egg Whites?

Yes, you can use one 500ml carton of egg whites to make this ham and cheese frittata.

Mix-Ins & Variations

Much like omelets and quiche, you can add almost anything to your breakfast frittata. Here are a few ideas:

  • Bacon or ground sausage
  • Mushrooms
  • Peppers or onions
  • Different cheese – goat cheese, feta, parmesan, etc
  • A splash of hot sauce or sriracha
  • Breakfast potatoes
  • Tomatoes
  • Broccoli

How to Make Ham and Spinach Frittata

Making a spinach frittata in the oven requires just a few simple steps.

  • Cook the spinach. Cook the spinach in oil and garlic until wilted. Add the ham and cheese.
  • Add the egg mixture. Whisk together the eggs, half and half, salt and pepper. Pour over the spinach mixture. Stir. Allow to cook until edges start to set.
  • Bake. Transfer the pan to the oven and bake until the eggs have set and look cooked through.
  • Serve. Cool for 4 minutes then slice and serve.

Can I Make This Frittata Ahead of Time?

It is best to enjoy this fresh but you can bake it up ahead of time – up to a day in advance – and warm it up in the oven.

How to Store Leftovers

  • How to store leftovers. Leftover spinach frittata can be stored in the fridge for up to 2 days. Cover it tightly with foil or transfer to an airtight container.
  • How to reheat leftovers. Frittata can be warmed up in the oven or in the microwave. Note that the microwave can change the texture of the eggs a bit.

Ingredients 

  • 2 tablespoons olive oil
  • 2 cups baby spinach
  • 3 cloves garlic, , minced
  • 1 cup ham, , diced
  • 1 cup cheddar cheese
  • 12 large eggs
  • 1/4 cup half and half
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions 

  • Preheat oven to 425°F.
  • In a large mixing bowl, whisk together the eggs, half and half, salt and pepper, set it aside.
  • In a 12-inch oven-safe skillet, add in your oil, spinach, and garlic. Cook over medium heat until the spinach is wilted, about 2 minutes. Add the ham and cheese to the pan.
  • Pour the egg mixture into the pan and briefly stir it to distribute the filling evenly. Allow the frittata to cook until the edges start to set, about 1 minute.
  • Place the pan into the oven and bake for 9-14 minutes until the eggs have set and look cooked through.
  • Allow the frittata to cool for 4 minutes, then slice and serve.
