These Easy No-Bake Homemade Granola Bars are delicious and healthier than any store bought variety. So simple, soft and chewy, and easily adaptable using your favorite mix-ins.

Well, we’re a couple weeks into the New Year. Did you all set new goals? Are you crossing things off your bucket list? Trying to eat healthier?
I’m not big on resolutions or the whole “new year, new you” mantra. But I do believe there’s something psychologically effective about changing things up or starting new habits (hopefully better ones!) in the new year. Sort of like beginning a diet on a Monday. I mean, who ever starts a diet on a Thursday?? HA.
My family are big time snackers. It’s not uncommon for us to ruin our appetites for dinner, because of tortilla chips and salsa at 3:30 in the afternoon. Whoops! But, at least it’s chips and salsa and not an entire package of Oreos. I’m determined to be more mindful about this in 2018.

One of my favorite snacks to make from scratch is granola bars. This way, I can avoid the high fructose corn syrup and preservatives that the packaged kind include. Plus, I don’t have to worry about peanut remnants that are unsafe for my kiddos. They are crazy easy to make, and there’s a million different combination possibilities. Great for morning, a lunch box, or after school. And all the ingredients I need are at Safeway. They’re my snacking headquarters in 2018!
Recipe Notes
The key to the success of these bars are making sure that your mix-ins are crushed and/or chopped finely when adding them to the oats, and also firmly pressing the mixture into the prepared pan. A deviation from either of these could result in crumbled granola, as opposed to solid bars.
How To Store These Granola Bars
Store in an airtight container in the refrigerator for up to 7 days.

Easy No-Bake Homemade Granola Bars
Ingredients
HAWAIIAN
- 3 cups rolled oats
- 1 cup toasted coconut
- 1/2 cup toasted macadamia nuts , finely chopped
- 1/2 cup mini chocolate chips
CHUNKY MONKEY
- 3 cups rolled oats
- 1/2 cup toasted walnuts , finely chopped
- 1/2 cup rice cereal
- 1/2 cup mini chocolate chips
- 1/2 cup banana chips , crushed
MOUNTAIN CLIMBER
- 3 cups rolled oats
- 1 cup roasted almonds , finely chopped
- 1/2 cup dried apricots , finely chopped
- 1/2 cup dried cranberries , finely chopped
LUNCH BOX
- 3 cups rolled oats
- 1 cup pretzels , crushed
- 3/4 cup crushed potato chips
- 1/2 cup mini M&Ms
THE HIPPIE
- 3 cups rolled oats
- 3/4 cup salted roasted sunflower seeds
- 1/2 cup raisins , finely chopped
- 1/2 cup mini chocolate chips
For The Sauce
- 6 tablespoons O Organics unsalted butter
- 1/2 cup O Organics light brown sugar
- 1/2 cup O Organics honey
- 1 teaspoon O Organics vanilla
- 1 teaspoon salt
Instructions
- Line a 9×13-inch baking pan with parchment paper or foil, leaving a slight overhang on the 2 long sides.
- Choose which granola bar you want to make. Combine the ingredients in a large bowl; set aside.
- To make the sauce, combine the butter, brown sugar, honey, vanilla, and salt in a medium saucepan over medium heat. Bring to a boil (the mixture will bubble and foam), stirring occasionally for 30 seconds. Remove from heat and let cool for a couple minutes, stirring so it doesn’t set. Pour over the oat mixture; stir until all ingredients are incorporated and coated.
- Spread mixture into the prepared pan and press firmly and evenly with a rubber spatula.
- Let the bars stand at room temperature until completely cool, then place in the refrigerator for at least 3 hours until firm enough to slice. Lift out of pan and cut into 24 bars.

These are the BEST ever!!! and I’ve made quite a few granola bars! I now make these at least every 2 weeks and change around with what I put in them.
I will say, also, that I toast my oatmeal first as well as the nuts. I like crunchy! Today I am going to try dates instead of the raisins/cray sins. Hope it works! And yes…..your warning about chopping and not adding anything more is true (I tried add a bit more and they were crumbly) I will follow to a T from now on!

What could you use instead of honey, maple syrup?
Hi Aly – these were developed with honey and I haven’t tested them with any substitutes, so for optimal results I would stick with how the recipe is written.
