Ingredients
HAWAIIAN
3 cups rolled oats
1 cup toasted coconut
1/2 cup toasted macadamia nuts, finely chopped
1/2 cup mini chocolate chips
CHUNKY MONKEY
3 cups rolled oats
1/2 cup toasted walnuts, finely chopped
1/2 cup rice cereal
1/2 cup mini chocolate chips
1/2 cup banana chips, crushed
MOUNTAIN CLIMBER
3 cups rolled oats
1 cup roasted almonds, finely chopped
1/2 cup dried apricots, finely chopped
1/2 cup dried cranberries, finely chopped
LUNCH BOX
3 cups rolled oats
1 cup pretzels, crushed
3/4 cup crushed potato chips
1/2 cup mini M&Ms
THE HIPPIE
3 cups rolled oats
3/4 cup salted roasted sunflower seeds
1/2 cup raisins, finely chopped
1/2 cup mini chocolate chips
For The Sauce
6 tablespoons O Organics unsalted butter
1/2 cup O Organics light brown sugar
1/2 cup O Organics honey
1 teaspoon O Organics vanilla
1 teaspoon salt
Instructions
Line a 9x13-inch baking pan with parchment paper or foil, leaving a slight overhang on the 2 long sides.
Choose which granola bar you want to make. Combine the ingredients in a large bowl; set aside.
To make the sauce, combine the butter, brown sugar, honey, vanilla, and salt in a medium saucepan over medium heat. Bring to a boil (the mixture will bubble and foam), stirring occasionally for 30 seconds. Remove from heat and let cool for a couple minutes, stirring so it doesn’t set. Pour over the oat mixture; stir until all ingredients are incorporated and coated.
Spread mixture into the prepared pan and press firmly and evenly with a rubber spatula.
Let the bars stand at room temperature until completely cool, then place in the refrigerator for at least 3 hours until firm enough to slice. Lift out of pan and cut into 24 bars.
Notes
• Store in an airtight container in the refrigerator for up to 7 days.• The key to the success of these bars are making sure that your mix-ins are crushed and/or chopped finely when adding them to the oats, and also firmly pressing the mixture into the prepared pan. A deviation from either of these could result in crumbled granola, as opposed to solid bars.
