Instructions
In a mixing bowl, whisk together all the dressing ingredients until combined. Taste and adjust seasoning, if desired.
Add in the cabbage, carrots, pickles, and onion. Toss everything to evenly coat.
Cover and chill for at least 1 hour before serving.
