I love cottage cheese and always coming up with new ways to enjoy it so breakfast and lunch never gets boring. This chickpea salad and cottage cheese toast has graced my table 3 days in a row.
The chickpea salad topping this toast is a bit different from my other chickpea salad recipe but equally as good. This one is loaded with sun-dried tomatoes, artichoke hearts, feta cheese, and cucumbers. All of those flavors pair so well with the creamy cottage cheese and thick sourdough toast.

- Make the chickpea salad. Combine all of the ingredients except the cottage cheese, salt, and pepper in a bowl.
- Assemble. Spread the cottage cheese over the toasted bread. Top with the chickpea salad.
- Garnish. Garnish each toast with some sea salt, freshly cracked black pepper, and a bit of parsley.
Tips for Success
- Use thick, sturdy bread. You can make cottage cheese toast on other types of bread. The most important thing is to choose bread that can hold the cottage cheese and chickpea salad.
- Customize the chickpea salad. Feel free to adjust the ingredients in the chickpea salad according to your preferences. Skip the artichoke hearts if you don’t like them or add in other ingredients such as olives, tomatoes, or onions.
- Use full-fat cottage cheese. I recommend using full-fat cottage cheese on the toast as it’s thicker and creamier than low-fat. I think the texture and flavor are nicer with the other ingredients. 2% would also work okay.
Proper Storage
This cottage cheese toast with chickpea salad should be enjoyed immediately once assembled. However, you can prep the chickpea salad in advance and keep it in an airtight container in the fridge for 3-4 days.

Ingredients
- 15 ounce can chickpeas , drained and rinsed
- 14 ounce can quartered artichoke hearts , drained, chopped
- 1 small Persian cucumber , diced (about 1/4 cup)
- 3 tablespoons finely diced sun-dried tomatoes
- 1/4 cup crumbled feta cheese
- 1 clove garlic , finely minced
- 1/4 cup chopped fresh parsley , plus more for garnish
- 1 & 1/2 tablespoons fresh lemon juice
- 1 tablespoon olive oil
- 2 large basil leaves , minced
- 1 & 1/2 cups full fat cottage cheese
- 6 slices sourdough bread , toasted
- Sea salt and fresh cracked pepper
Instructions
- In a medium mixing bowl, combine the chickpeas, chopped artichokes, diced cucumber, sun dried tomatoes, feta cheese, minced garlic, parsley, lemon juice, olive oil, and basil.
- Spread cottage cheese over toasts and top with the chickpea salad.
- Garnish each toast with a bit of seat salt, fresh cracked black pepper, and a bit of extra parsley.
