Easy Chickpea Chocolate Chip Cookies
These Chickpea Cookies always leave me stumped on how to describe them. They’re soft, but not gooey like a Nestle Tollhouse, and they aren’t crunchy like biscotti. They aren’t thin, but they’re also not thick. They’re not overly sweet, but they are sweet enough. Basically, they’re the best of both worlds and just really good.
And while chickpeas may sound like a strange ingredient, they do add a great amount of protein, a subtle nutty flavor, and a nice textural element – if I served you one and didn’t tell you there were chickpeas in the dough, you probably wouldn’t even know.
What Are Chickpea Cookies?
Chickpea cookies are exactly what they sound like – cookies made with chickpeas. In this case, it’s a spin-off of a chocolate chip cookie, with chickpeas and oats added.
Are chickpea cookies healthy? Well…they’re healthier than your normal chocolate chip cookie, that’s for sure! Both the oats and chickpeas add protein and other nutrients to the cookies. That said, these are still made with semi-sweet chocolate, brown sugar, and flour so I wouldn’t necessarily label them as “healthy”.
Ingredients Needed
Besides the chickpeas, the ingredients used in these chocolate chip chickpea cookies are all pantry staples.

- Brown sugar – Brown sugar gives these cookies a warm, molasses flavor.
- Eggs – To give the dough structure.
- Vanilla – For added flavor.
- Chickpeas – Drain and rinse your can of chickpeas to remove the aquafaba (the liquid in the can).
- Chocolate chips – I used semi-sweet chocolate chips but dark chocolate would also work.
- Flour – Make sure to spoon and level when measuring so you don’t end up with excess flour, which can result in dry crumbly cookies.
- Rolled oats – Oats add some texture and additional fiber and protein to these cookies.
- Baking soda – Helps make the cookies tender.
- Salt – Added so the cookie flavor isn’t flat.
How to Make Chickpea Cookies
The dough for these easy cookies comes together in just a few minutes. There’s no need to chill the dough either.

- Make the dough. Cream the brown sugar and butter until light and fluffy, then beat in the eggs and vanilla. Stir in the chickpeas and chocolate chips. Add the flour, oats, baking soda, and salt.
- Form the dough balls. Drop the dough by tablespoons onto prepared baking sheets, 2 inches apart. Press down gently on the tops to flatten.
- Bake. Bake for 12 minutes, until the edges are golden brown.
Proper Storage
These chickpea cookies can be stored in an airtight container at room temperature for up to 3 days. You can also freeze them for a few months in a freezer-safe container. Just thaw on the counter before enjoying!

Chocolate Chickpea Cookies
Ingredients
- 1 cup packed brown sugar
- 3/4 cup butter
- 2 large eggs
- 2 teaspoons vanilla
- 15 ounces canned chickpeas , drained and rinsed
- 2 cups semi-sweet chocolate chips
- 2 cups all-purpose flour , spooned and leveled
- 1/2 cup rolled oats
- 1 teaspoon baking soda
- 1/4 teaspoon salt
Instructions
- Preheat oven to 350 degrees F. Line baking sheets with parchment paper.
- Cream together the brown sugar and butter with an electric mixer until light and fluffy, 2 to 3 minutes. Beat in the eggs and vanilla. Then add in the chickpeas and chocolate chips.
- Add in the flour, oats, baking soda, and salt.
- Drop the dough by tablespoons onto the prepared baking sheets, 2 inches apart. Press down gently on the tops to flatten.
- Bake for about 12 minutes until the cookies are golden and just set. Transfer to a cooling rack.
