This Chickpea Salad and Cottage Cheese Toast features creamy cottage cheese on a thick slice of sourdough toast topped with a tangy, savory chickpea salad. A quick & easy, protein-packed lunch or snack!
1/4cupchopped fresh parsley, plus more for garnish
1 & 1/2tablespoonsfresh lemon juice
1tablespoonolive oil
2largebasil leaves, minced
1 & 1/2cupsfull fat cottage cheese
6slicessourdough bread, toasted
Sea salt and fresh cracked pepper
Instructions
In a medium mixing bowl, combine the chickpeas, chopped artichokes, diced cucumber, sun dried tomatoes, feta cheese, minced garlic, parsley, lemon juice, olive oil, and basil.
Spread cottage cheese over toasts and top with the chickpea salad.
Garnish each toast with a bit of seat salt, fresh cracked black pepper, and a bit of extra parsley.
