Everything Bagel seasoning and a drizzle of hot honey add a savory-sweet finish before you fold the salami up like a tiny taco. I pat the pickles completely dry so nothing slips around, and all 12 are ready in about 10 minutes with only 5 ingredients and no cooking!

I haven’t met a pickle snack I didn’t like. Truly. I’ve been wrapping pickles in deli meat for years (my ham pickle roll ups are one of my most-made snacks at home!), so when I saw the viral pickle salami tacos making the rounds, I knew I needed to try them. And I’m so glad I did! The juicy snap of the pickle and the sweet heat had me reaching for a second straight away. Most versions use dill pickles or cornichons, which are great! But went with mini sweet gherkins here. Their mellow sweetness pairs so well with the salty salami and spicy hot honey.
For the creamy layer, I use whipped cream cheese because it spreads easily, but you can absolutely play around with flavored varieties or use regular softened cream cheese. The thin Genoa salami also bends easily around each pickle without tearing, giving the tacos their cute little shape. There’s no slicing, cooking, chilling, or special equipment needed, which makes these about as easy as an appetizer gets!
Helpful Tips and Variations
- Dry the pickles well. I like to give each gherkin a good blot with paper towels before assembling. If they’re still glistening with brine, the cream cheese will soften and slide around and make these salami pickle tacos messy to eat.
- Stick with thin salami. Thin Genoa salami is easy to fold without tearing and gives the pickles plenty of support. Look for rounds that are large enough to come up around the sides like a tiny taco shell.
- Double up if you’re a salami fan! The viral recipe I first saw on social media used two slices of salami for each taco, but I don’t find that necessary here. The salami is plenty sturdy enough for me! But if you want to double them, add a little cream cheese between the salami slices to help them stay together.
- Switch up the meat. Large sandwich pepperoni is an easy swap, or cut thin deli ham, chicken, turkey, or roast beef into rounds. Whatever you use, make sure it’s large enough to fold around the mini pickle!
- Play around with the cheese. I much prefer whipped cream cheese because it spreads easily straight from the fridge, but softened regular cream cheese works, too. Let it sit out at room temperature for about 15 minutes to make it easier to spread. I also think a flavored cream cheese would be delicious here! Try chive and onion, garlic and herb, French onion, or your favorite spreadable cheese (like Boursin!)

Ingredients
- 12 mini sweet Gherkin pickles, (see notes)
- 8 oz. whipped cream cheese, (see notes)
- 12 slices Genoa salami
- 1½ tsp Everything Bagel seasoning
- ¼ cup hot honey
Instructions
- Pat the mini pickles completely dry.
- Spread about 1 tablespoon of whipped cream cheese onto each slice of salami. Top with a mini pickle in the center.
- Sprinkle with Everything Bagel seasoning.
- Drizzle with a little hot honey.
- Bring the sides of the salami up over the cream cheese so it looks like a taco.
- Serve immediately while the pickles are cold and crisp.

How to Make Mini Pickle Salami Tacos Step by Step

Gather all of your ingredients.

Dry the pickles: Pat 12 mini sweet gherkin pickles all over with paper towels. Keep blotting until the surfaces look dry rather than glossy with brine. This helps the cream cheese stay in place.

Assemble the pickle tacos: Lay 12 slices of Genoa salami flat on a clean work surface. Spread about 1 Tbsp of whipped cream cheese over the center of each slice. It should spread smoothly without pulling or tearing the salami. Leave a little room around the edges so the filling doesn’t squeeze out when folded. You may have some cream cheese left over, depending on the size of the salami slices.
Sprinkle the tacos evenly with 1½ teaspoons Everything Bagel seasoning. Then place one dried gherkin lengthwise through the center of each salami slice, making sure both sides of the salami can come up evenly around it. Drizzle ¼ cup hot honey over the exposed cream cheese. I aim for a light drizzle rather than letting the honey pool.

Fold and serve: Bring the two sides of each salami slice up around the pickle to create a tiny taco shape. The salami should cradle the pickle without needing to close completely.

I’d serve these mini pickle tacos as a quick afternoon snack or add them to a snack board, charcuterie board, or game day spread. If the sides won’t stay upright, slide a cocktail stick through the salami and pickle to hold everything together and make them easier for guests to grab. I’d also save the hot honey drizzle when serving a crowd and pour it into a small bowl instead. That way, everyone can dip or drizzle as much as they like without making the platter sticky.
You can also skip the hot honey and serve these with sweet chili sauce for a sweet and tangy kick or homemade ranch dip for something cool and creamy. Then my wildcard dip choice is this copycat Chick-fil-A sauce! Its sweet, smoky flavor is surprisingly delicious with the salty salami and pickles.

This recipe makes it easy to prepare only as many pickle salami tacos as you’ll enjoy in one sitting. And if you don’t make enough? They’re so quick to throw together that it won’t matter! I definitely recommend making them fresh, as the pickles release moisture once assembled. However, if you do have any leftover, I’d store them in a single layer in an airtight container in the refrigerator and enjoy them within a day.
Make Ahead
To prep for a party, I’d spread the salami with cream cheese, add the Everything Bagel seasoning, then cover and refrigerate. Add the dried pickles and hot honey right before serving so everything stays crisp and neat.
