We’re a month into the school year now and both kids being gone full days is glorious – I get so much done in six and a half hours! And I miss them. It’s nice to miss them.
But juggling homework and after school sports is a mess. They come home starving and by the time they finish their snack, it’s past 3. Which means if we do an early dinner, they won’t eat. So I’m serving dinner late most nights after sports – like 7:30. ACK. That’s super late for us.
Breakfast for dinner it is! A lot of that going on here. Eggs, pancakes, waffles, and overnight casseroles to the rescue.
This is also a good opportunity for me to get my potato fix. Since the kids don’t like baked or mashed potatoes (who doesn’t like mashed potatoes?!! *shakes fists*), I live a life deprived of spuds. But they do love french fries and definitely Tater Tots® potatoes – their favorite!
I always have Ore-Ida Tater Tots® potatoes in the freezer – they seem to brown and crisp up better than other frozen brands. Trevor could make an entire meal out of them if I let him. So, I was super happy when they asked if I wanted to create a recipe for them. Heck ya!

And this casserole was totally easy and delicious. Perfect for breakfast, or in my case, dinner.
Tater Tots® potatoes Breakfast Casserole
Prep time: 15 minutes
Cook time: 1 hour
• 4 eggs
• 1 3/4 cups colby jack cheese
• 3/4 cup small curd cottage cheese
• 1/4 teaspoon salt
• 1/8 teaspoon pepper
• 1/2 pound (about 6 slices) bacon, diced
• 1 medium onion, diced
• 2 cloves garlic, minced
• 3 cups Ore-Ida frozen Tater Tots® potatoes
• chopped scallions for garnish
Preheat oven to 350F. Coat a 2-quart casserole dish with cooking spray.
In a large mixing bowl, whisk together the eggs, colby jack cheese, cottage cheese, salt, and pepper. Set aside.
In a large skillet, sauté the onion and bacon over medium-high and cook until bacon is crisp and onions are translucent; about 5 minutes. Drain off fat; add garlic and stir for 30-60 seconds until fragrant. Remove from heat stir into the egg mixture. Fold in the Tater Tots® potatoes.
Transfer mixture to the prepared casserole dish and bake uncovered for 1 hour or until a knife inserted near the center comes out clean. Let stand 5 minute before serving.
