This Toffee Bark is rich, buttery, sweet, and salty with layers of homemade toffee, semi-sweet chocolate, almonds and pecans, and a sprinkle of sea salt on top. It’s surprisingly easy to make with just a few minutes of hands-on time, and makes a great edible gift.

I love toffee and have made several variations of it before, including Matzo toffee, saltine cracker toffee, and Ritz Cracker toffee bars. This toffee bark is another favorite and so addicting. I can never eat just one piece! The buttery toffee, the rich chocolate, and the nuts just work together so well, offering a variety of both flavor and texture. I added a sprinkle of sea salt for that salty sweet flavor I love so much.

Helpful Tips & Variations

  • Butter. Salted or unsalted butter both work depending on your taste preference.
  • Nuts. I use equal parts sliced almonds and finely chopped pecans, but you can just include one if preferred.
  • Chocolate chips. Mini chocolate chips are my preference here because they’re easier to distribute and melt faster.
  • Wait for the perfect texture. When heating the toffee mixture, it will bubble up and have a light, fluffy appearance first. Let it continue cooking, stirring occasionally, until it reaches a glossy appearance with a rich amber color
  • Work quickly. When adding the various layers to the toffee, work quickly so that the almonds are added before the toffee sets, and the pecans and flakey sea salt are added while the chocolate is still melted.
  • Customize the toppings. I love the combination of almonds, pecans, sea salt, and semi-sweet chocolate. However, this toffee bark can definitely be customized! Dark chocolate chips or milk chocolate will work and the nuts can be omitted or swapped for others. I’ve also seen versions with crushed pretzels added.
  • Let harden before breaking. It takes a few hours for this toffee to harden completely in the fridge. If all layers aren’t fully hardened, it won’t break apart as easily or cleanly.

Ingredients 

  • 1/2 cup butter, cubed
  • 1/2 cup granulated sugar
  • 1/2 teaspoon vanilla
  • 1/4 teaspoon coarse salt
  • 1/4 cup sliced almonds
  • 1 cup mini chocolate chips
  • 1/4 cup finely chopped pecans
  • Flakey sea salt

Instructions 

  • Line a 9×13 rimmed sheet pan with parchment paper.
  • In a small saucepan over low heat, combine cubed butter, sugar, vanilla, and coarse salt. Stir occasionally until the mixture is glossy and a deep amber color. (It will bubble up at first and look light and fluffy, just be patient.)
  • Remove from the heat and pour the mixture onto the prepared baking sheet in an even layer.
  • Working quickly before it hardens, sprinkle with sliced almonds. Let it sit for 2 minutes.
  • Top with mini chocolate chips and let sit for 3 to 5 minutes until they melt, then spread the chocolate in an even layer, using an offset spatula.
  • Transfer to the fridge to harden and set.
  • Crack into bite sized pieces and enjoy!

How to Make Toffee Bark Step by Step

  • Prepare a sheet pan. Line a 9×13 rimmed sheet pan with parchment paper.

Proper Storage

  • Room temperature. Toffee bark can be kept in an airtight container at room temperature for up to a week. Just make sure it’s kept away from sunlight, heat, or moisture as the chocolate can melt.
  • Fridge. It can also be stored in the fridge for up to 2 weeks.
  • Freezer. For longer storage, flash freeze the toffee bark on a baking sheet until solid then transfer it to a freezer-safe Ziploc bag. Freeze for up to 3 months. Thaw in the fridge or on the counter.
