My goodness, roasted vegetables are like candy! And Roasted Cabbage is no exception. This latest side dish with awesome flavor is one of my new go-toโ€™s.

Another Safeway tour is in the books, and another fabulous experience imprinted on my brain. This time we visited Cobram Estate, which is one of the most award-winning olive oil companies in the world. Any day that involves touring an olive oil plant and walking around olive groves is ok by me!

Then we ended our day with a luncheon hosted by Cobram Estate, Boarโ€™s Head, and Dasani. Fabulous top to bottom.

Their products were put to good use in this roasted cabbage recipe. Youโ€™ve had cabbage boiled and youโ€™ve had it sautรฉed, right? But have you ever had it roasted? Itโ€™s fantastic.

How to Make Roasted Cabbage

This roasted cabbage recipe couldnโ€™t be easier, too. You only need a head of cabbage, olive oil, shallot, garlic, salt, pepper, and bacon. (Scroll below for the detailed printable recipe card.)

  • Slice into thick wedges: Instead of chopping the vegetable up, itโ€™s best to slice it into 1-inch thick wedges for roasted cabbage steaks.
  • Uniform thickness for even cooking: Slice the wedges into uniform thickness so they cook at the same rate.
  • High heat is best: Roast at 425 degrees F.
  • Flip halfway through: Gently flip halfway through cooking. This allows the slices to roast evenly and brown on both sides.
  • Don’t over cook: Roast until the cabbage is tender and slightly crisp. Donโ€™t over-cook the cabbage steaks or theyโ€™ll be mushy and fall apart. You want them to be al dente and nicely browned around the edges.

Roasted Cabbage Recipe Variations

  • Sprinkle additional seasonings on your cabbage steaks like thyme or oregano.
  • Use a dash of cayenne pepper for a little kick.
  • Add a generous helping of freshly grated Parmesan.
  • Top with a dollop of olive tapenade.

I love it simple, though. Roasting vegetables brings out the absolute best flavor, and with the added salty bacon, these cabbage steaks really donโ€™t need much else.

Know some people who donโ€™t like cabbage? Roast some up with extra-virgin olive oil and crispy cooked bacon – you might convert them!

This healthy side dish pairs well with just about any main meal, but we especially love it with Skillet Steak and Roast Chicken.

Roasted Cabbage with Crispy Bacon

Roasted Cabbage is basted with olive oil, shallot, and garlic, then topped with crumbled crispy bacon. This is such an easy, healthy, delicious side dish to go with any meal!

Ingredients 

  • 2 1/2 tablespoons extra-virgin olive oil, , divided
  • 1 head green cabbage , (about 1 3/4 pounds)
  • 1 shallot, , roughly diced
  • 3 cloves garlic, , minced
  • salt and pepper, , to taste
  • 6 slices bacon

Instructions 

  • Preheat oven to 425 degrees F. Lightly coat a 15×10-inch roasting pan with 1/2 tablespoon of the olive oil.
  • Slice the cabbage into 1-inch thick steaks, lengthwise, keeping the core intact.
  • Brush both sides of each cabbage steak with the remaining olive oil. Sprinkle the shallot, garlic, salt, and pepper over each one. Arrange cabbage steaks on the roasting pan (overlapping slightly is fine, if necessary.)
  • Transfer to the oven and roast for 20 minutes. Gently turn each steak over and roast for an additional 15 minutes, until the cabbage is tender and a little charred around the edges.
  • In the meantime, cook your bacon! You can either:
    1. Cook it in the oven with the cabbage – line a rimmed baking sheet with foil coated with cooking spray. Lay the strips of bacon on the baking sheet, without overlapping. Transfer to oven and cook for 20-25 minutes until crispy. Drain on a paper towel-lined plate. Once cooled, crumble into pieces.
    2. Cook it in a fry pan – diced up the bacon. In a medium nonstick skillet, cook bacon over medium-high heat until browned and crispy, about 5-6 minutes. With a slotted spoon, transfer to a paper-towel lined plate to drain.
  • Sprinkle the crispy bacon over the roasted cabbage and serve immediately.

Notes

    Can’t wait to make this. Usually just make cabbage with corned beef, but this should be good all by itself.
