This pumpkin oatmeal recipe is the perfect breakfast for fall mornings. It’s warm and cozy with rolled oats to keep you full, and plenty of pumpkin spice flavor.

Aside from the great flavor, this recipe is great because it comes together in just a few minutes AND it’s easy to meal prep. It’s quick enough to make every morning but you can also just pop leftovers in the microwave on those super busy days.

This would make a great Thanksgiving morning breakfast too.

  • Oats – Old fashioned rolled oats are ideal. See notes below.
  • Pumpkin pie spice – Use our homemade pumpkin spice recipe or buy it at the store. You can also substitute cinnamon, allspice, nutmeg, or a combination of spices.
  • Milk – You can substitute half and half or heavy cream for a richer flavor. Be careful when using heavy cream so you do not overheat it, or it will scald and potentially curdle. You can use water, but the result will be far less flavorful and creamy.
  • Pumpkin puree – Be sure to use 100% canned pumpkin (or freshly mashed) for this recipe. Avoid pumpkin pie filling, since it is already seasoned.
  • Brown sugar – Substitute light brown or granulated white sugar for a sweeter dessert. Substitute maple syrup or honey for a more natural sweetener. Adjust according to taste preferences.
  • Pecans – An optional garnish to add a bit of nutty flavor and texture.

What Oats Should I Use?

I recommend old fashioned rolled oats. If needed, you can substitute quick or steel-cut oats but be aware that they will require a different amount of time to cook. Quick oats need just a minute to cook thoroughly, while steel-cut oats require 20-25 minutes of boiling. They will also absorb a different amount of liquid (steel-cut needs more liquid, and quick oats need less), so adjust your recipe accordingly.

  1. Combine the ingredients. Whisk together the oats and pumpkin pie spice in a saucepan. Add the milk and pumpkin puree. Stir until smooth.
  2. Warm. Heat until bubbling then simmer for 2-4 minutes.
  3. Garnish and serve. Remove the pan from heat then stir in the brown sugar. Serve with pecans and additional milk if desired.

Topping Ideas

I typically top my pumpkin spice oatmeal with pecans and a splash of milk but you can absolutely get fancy with it. Here are some ideas:

  • Toasted walnuts
  • A spoonful of almond or peanut butter
  • Banana slices
  • Chocolate chips
  • Half and half (for a creamier texture than milk)
  • Pumpkin seeds
  • A sprinkle of cinnamon or pumpkin spice

Proper Storage

  • Fridge. Store any leftovers in an airtight container in the refrigerator for 3 days.
  • Reheat. To reheat, add a splash of milk or water and microwave for a minute or two until heated. You may need to stir in more liquid as the oatmeal will thicken as it cools.
  • Freezer. If you want to make a larger batch to keep later, you can freeze it in a freezer-safe container for 1-2 months. To reheat frozen oatmeal, let it thaw in the refrigerator overnight, then reheat as usual.

Ingredients 

  • 1 cup old-fashioned rolled oats
  • 3/4 teaspoon pumpkin pie spice
  • 2/3 cup whole milk
  • 2/3 cup canned pumpkin puree
  • 1/4 cup dark brown sugar, , packed
  • toasted pecans, , optional, for serving
  • extra milk, , optional, for serving

Instructions 

  • Whisk together the old-fashioned oats and pumpkin pie spice in a medium saucepan.
  • Add in the milk and pumpkin puree and stir until smooth.
  • Warm over medium heat until bubbling, then gently simmer for 2-4 minutes or until the oats are softened.
  • Remove from the heat and stir in the dark brown sugar.
