Ingredients
- 1 & 1/2 pounds frozen popcorn chicken (or chicken nuggets)
- 4 cups prepared mashed potatoes
- 1 cup frozen corn kernels , thawed
- 1 cup prepared beef gravy
- 1/4 cup shredded cheddar cheese
- salt and black pepper , to taste
Instructions
- Cook the chicken according to package directions (I like to air fry mine, so they’re nice and crispy.)
- While the chicken is cooking, prepare the mashed potatoes, then keep them warm.
- In a microwave-safe bowl, combine the thawed corn kernels and beef gravy. Microwave on high for 1-2 minutes, or until heated through. Stir to combine.
- To assemble the bowls, divide the warm mashed potatoes evenly among 4 serving bowls. Top each bowl of mashed potatoes with a generous portion of the popcorn chicken. Spoon the corn and gravy mixture over the popcorn chicken in each bowl. Sprinkle shredded cheddar cheese over the top of each bowl.
