These Copycat KFC Bowls include crispy popcorn chicken, mashed potatoes, corn, gravy, and melted cheese, just like you'd get at the restaurant but without leaving the house! They're super easy to assemble and pure comfort food on a busy weeknight.
Cook the chicken according to package directions (I like to air fry mine, so they’re nice and crispy.)
While the chicken is cooking, prepare the mashed potatoes, then keep them warm.
In a microwave-safe bowl, combine the thawed corn kernels and beef gravy. Microwave on high for 1-2 minutes, or until heated through. Stir to combine.
To assemble the bowls, divide the warm mashed potatoes evenly among 4 serving bowls. Top each bowl of mashed potatoes with a generous portion of the popcorn chicken. Spoon the corn and gravy mixture over the popcorn chicken in each bowl. Sprinkle shredded cheddar cheese over the top of each bowl.
Microwave each bowl for an additional 30-60 seconds, or until the cheese is melted and bubbly.
