S’mores Banana Boat Recipe

It seems like if I only buy two or three bananas, they’re gone way too fast, forcing me to go back to the store. But if I buy a whole bundle, they go bad long before I have a chance to use or freeze them. It’s the whole banana dilemma that I know has consumed the nation for years. HA.

Along with banana bread, banana muffins, banana pudding, and banana smoothies, these banana boats are another awesome use for them. Perfect for any campers out there, for sure!

I jammed mine full of semi-sweet chocolate and butterscotch chips, but you could use dark chocolate, white chocolate, coconut, graham cracker crumbs, nuts – whatever floats your banana boat!

S’mores Banana Boats are a a great way to use up ripe bananas and an insanely easy treat to satisfy any sweet tooth. Perfect for making at home in the oven or on the grill, or over a campfire while camping!

Ingredients

  • 1 large banana
  • 1 tablespoon milk chocolate chips
  • 1 tablespoon butterscotch chips
  • 2 tablespoons mini marshmallows
  • 2 tablespoons crushed cinnamon graham crackers
  • aluminum foil

Instructions

  • For the grill: heat grill to medium-high heat. Peel the banana, slice lengthwise, and slightly open to create a pocket. Place on some aluminum foil. Insert marshmallows, chocolate, and butterscotch chips into the banana. Wrap the banana up in the foil and cook on the grill until everything is gooey and melty, about 7 minutes. Unwrap and sprinkle the graham crackers on top. Eat with a spoon.
  • For a campfire: Keep banana peeled, slice lengthwise twice, and lift up flap of peel. Slice banana and add the chocolate, butterscotch, and marshmallows. Replace peel flap and wrap banana with foil. Let the flames die down a bit before adding the foil packets directly to the fire. Cook 3-5 minutes or until soft and melted. Carefully unwrap and sprinkle the graham crackers on top.
  • For the oven: Preheat oven to 400 degrees. Peel the banana, slice lengthwise, and slightly open to create a pocket. Place on some aluminum foil. Insert marshmallows, chocolate, and butterscotch chips into the banana. Wrap the banana up in the foil, place directly on the cooking rack and bake for 6-7 minutes.

My kids LOVED these!! I’m thinking with ideas like this, there should be NO excuse for bananas to go to waste….

I am so picky about bananas. I only like them when they’re green, basically. Almost yellow but not quite. As you can imagine….most of them go bad. But from now on, most of them are becoming s’mores boats!

We have been making them for years and years. We usually top them with ice cream straight off the grill. Yum!
