Ingredients
For the Salad
8oz.bag tri-color coleslaw
1cupblack beansdrained and rinsed
1cupcorndrained
1smallred bell pepperdiced
¾cupdiced scallions
2-3jalapeñosdiced
¼cupchopped cilantro
3.5oz.bag chili cheese Fritos corn chips
For the Dressing
½cupmayonnaise
½cupsour cream
1-2tbspminced chipotle peppers in adobo sauceor sriracha
1¼tbsptaco seasoning
¼cuplime juice
Instructions
In a large mixing bowl, add all the salad ingredients (except the Fritos.)
In a separate medium mixing bowl, add all the dressing ingredients and whisk until smooth and combined.
Pour dressing over the salad and toss to coat.
Add in the Frito corn chips and gently toss to coat again.
Enjoy immediately while the Fritos are still crunchy!
