I have made these chocolate chip coffee muffins so many times over the years. They combine two of my favorite things – coffee and chocolate. I love enjoying one warm for breakfast or brunch, though they also make an excellent sweet treat in the afternoon. If you love chocolate and coffee, keep some extras in the freezer so you can enjoy one anytime!
Helpful Tips
- Measure the flour properly. Be sure to spoon the flour into the measuring cup and then level it off, don’t just scoop. Too much flour will result in dry, dense muffins.
- Use chilled coffee. Save some of your hot morning coffee and chill it in the fridge, so you can make these muffins right away! You could also use cold brew for a more intense coffee flavor.
- Try dark chocolate. Dark chocolate chips could easily be used in this recipe for a richer chocolate flavor.
- Don’t overmix. When combining the ingredients, mix just until everything is evenly combined. Overbaking can lead to dense muffins.
Chocolate Chip Coffee Muffins

Ingredients
- 2 cups all-purpose flour, spooned and leveled
- 2/3 cup granulated sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 3/4 cup semi-sweet chocolate chips
- 1/3 cup whole milk
- 1/3 cup brewed coffee, chilled
- 5 tablespoons unsalted butter, melted
- 2 teaspoons vanilla
- 1 large egg
- 1 tablespoon instant coffee granules
Instructions
- Preheat oven to 400F. Line a standard muffin tin with cupcake liners and lightly coat with nonstick spray.
- In a large bowl, whisk together the flour, sugar, baking powder, salt, and chocolate chips.
- In a medium bowl, whisk together the whole milk, chilled coffee, melted butter, vanilla, egg, and instant coffee granules.
- Add wet mixture to the dry mixture and combine until just moist.
- Spoon batter into muffin liners and bake for 15-18 minutes until a toothpick in the center comes out clean.
- Remove from oven; transfer to a wire rack. Eat warm and enjoy!

How To Make Chocolate Chip Coffee Muffins Step by Step

Proper Storage
- Room temperature. These chocolate chip coffee muffins can be stored in an airtight container on the counter. They’re best enjoyed within 3-4 days.
- Freezer. They also freeze well. Allow them to cool completely, then transfer to a freezer-safe bag. Freeze for up to 2 months. Thaw on the counter and enjoy!

I don’t drink coffee, either, but I love baking with it. Especially when it’s with Bob’s Red Mill! I only have 17 (I went and counted :)) of their flours but I have to drag them all the way over here to Germany with me or have friends ship it (which shoots up the cost to about $25 per 5 lb bag). Luckily I had a friend visiting her parents in the US for Thanksgiving and she brought back a lot of BRM goodies for me. It was an early Christmas. :D
