2cupsall-purpose flourspooned and leveled
2/3cupgranulated sugar
2teaspoonsbaking powder
1/4teaspoonsalt
3/4cupsemi-sweet chocolate chips
1/3cupwhole milk
1/3cupbrewed coffeechilled
5tablespoonsunsalted buttermelted
2teaspoonsvanilla
1largeegg
1tablespooninstant coffee granules
Instructions
Preheat oven to 400F. Line a standard muffin tin with cupcake liners and lightly coat with nonstick spray.
In a large bowl, whisk together the flour, sugar, baking powder, salt, and chocolate chips.
In a medium bowl, whisk together the whole milk, chilled coffee, melted butter, vanilla, egg, and instant coffee granules.
Add wet mixture to the dry mixture and combine until just moist.
Spoon batter into muffin liners and bake for 15-18 minutes until a toothpick in the center comes out clean.
Remove from oven; transfer to a wire rack. Eat warm and enjoy!
