Easy Brussels Sprouts Wrapped in Bacon

Brussels sprouts are definitely a “love it or hate it” vegetable, but if there was ever a recipe to change a few minds, it would be these bacon wrapped brussels sprouts!

Not only are the brussels sprouts wrapped in strips of bacon, they’re also topped with pure maple syrup, which caramelizes in the oven. The end result is a savory-sweet dish that’s almost impossible NOT to love.

These make a great party appetizer, especially if you add some toothpicks and a dipping sauce like more maple syrup, ranch, or dijon, but they can also be served up as a side dish next to some salisbury steak or baked chicken breast.

Ingredients Needed

This brussels sprouts recipe is made with just 3 ingredients, plus a little simple seasoning.

  • Brussels sprouts – Fresh Brussels sprouts (not frozen), cleaned, rough outer leaves removed, ends trimmed.
  • Bacon – Thin bacon works best. Definitely avoid extra thick bacon for this recipe.
  • Maple syrup – REAL maple syrup is key. No pancake syrup!
  • Salt and pepper – A little salt and pepper season the brussels.

How to Make Bacon Wrapped Brussels Sprouts

Here’s how to make this easy bacon wrapped appetizer.

  1. Wrap the brussels sprouts with bacon. Sprinkle the brussels with a bit of salt and pepper, slice the bacon in half, then wrap each brussels sprout with bacon. Overlap the edges slightly.
  2. Add the maple syrup. Brush the maple syrup over each brussels sprout. Place on a baking sheet lined with parchment paper.
  3. Bake. Bake at 400F for 25 to 30 minutes, until the bacon is golden brown and the brussels sprouts are tender. Enjoy immediately.

Can I Make These In The Air Fryer?

Yes, bacon wrapped brussels sprouts can be made in the air fryer by preparing as directed and air frying at 400 degrees for about 15-20 minutes. They will cook faster due to circulating air, so be sure to keep on eye on them to prevent any burning.

Tips for Success

Here are a few tips for making this appetizer even quicker and easier.

  • Don’t add the maple syrup on the baking sheet. I recommend brushing the bacon wrapped brussels sprouts on a cutting board or plate instead of the baking sheet. As the recipe cooks, the maple syrup could burn before the bacon/sprouts are done cooking. Brushing or spooning the maple syrup on a different area allows the access to drip off and prevent burning.
  • Use similar size brussels sprouts for even cooking. To make sure all the brussels sprouts cook at the same rate, make sure they’re approximately the same size. If you have a few that are extra large, cut them in half.
  • Use thin bacon. The thinner the bacon, the crispier it will get. Thicker slices don’t crisp up nicely, even if you cook them longer.
  • Go easy on the salt. Bacon is already salty, so just a little sprinkle of coarse salt on the veggies is plenty.

Serving Suggestions

Depending on the occasion, I will either serve these brussels sprouts wrapped in bacon in a bowl as they are or add some toothpicks for a grab-and-go appetizer option – they work great for parties, holidays, and game days.

These brussels sprouts can be served alone or with dipping sauce, such as extra maple syrup, ranch dressing, or honey dijon sauce. If I’m serving up sauces, I almost always add toothpicks.

Proper Storage

These brussels sprouts are best when served immediately. Leftovers tend not to store well, as the bacon doesn’t stay crispy. However, if needed, you can store leftover bacon wrapped brussels sprouts in an airtight container for up to 2 days. Reheat in the air fryer for the best results (and especially to keep them crispy).

Ingredients 

  • coarse salt and pepper, , to taste
  • 12 fresh brussels sprouts, , cleaned, rough outer leaves removed, ends trimmed
  • 6 slices of thin bacon
  • 2 tablespoons real maple syrup

Instructions 

  • Preheat the oven to 400 degrees and line a baking sheet with foil or parchment paper.
  • Slice bacon strips in half.
  • Sprinkle a bit of salt and pepper on the brussels, then carefully wrap each brussels sprout with bacon, being sure to overlap the edges slightly.
  • Brush or spoon maple syrup over each bacon wrapped brussels sprouts and place on the prepared baking sheet.
  • Bake in the preheated oven for 25 to 30 minutes or until the bacon is golden brown and brussels sprouts are fork tender.
  • Serve and enjoy.
    NOTE: even though bacon is salty on its own, we still like to salt the veggies for more flavor. Feel free to omit, if preferred. But we recommend not skipping the pepper.
