It may sound like an unusual combination of ingredients, but trust me – it works! The end result is sweet, savory, and crunchy. Perfect for summer!

Move over Waldorf salad, there’s a new apple celery salad in town! This apple date celery salad includes not only those three ingredients but also parsley, microgreens, cucumbers, and pecans. The dressing is creamy but light and loaded with freshly grated parmesan. Celery being one of my least favorite ingredients, I didn’t know what to expect the first time making this, but wowza! Sweet, savory, salty, creamy, crunchy…this salad is DELISH.
Helpful Tips
- Use a sweet apple. For the best flavor profile in this salad, I recommend using a sweet apple variety. I love honeycrisp apples for their sweet flavor and the fact that they hold up well in salads.
- Equal pieces. All of the diced and chopped ingredients – the celery, apples, cucumbers, etc – should be roughly the same size. That way, there can be a little bit of everything in each bite!
- Use freshly grated parmesan. With over a cup of parmesan cheese in this salad, it’s important to A) grate it yourself and B) use a quality cheese. Definitely avoid the green containers and I would personally avoid any pre-grated parmesan. The flavor just isn’t the same.

Ingredients
FOR THE SALAD
- 5 stalks celery, , ends trimmed, chopped
- 1 large honey crisp apple, , diced
- 1 English cucumber, , diced
- 1 bunch fresh parsley, , finely chopped
- Handful micro greens
- 8 pitted Medjool dates, , diced
- 1/2 cup toasted chopped pecans
FOR THE DRESSING
- 1/2 cup mayonnaise
- 1/4 cup avocado oil
- 2 large lemons, , juiced
- 2 teaspoons pure maple syrup
- 1 1/2 cups freshly grated Parmesan
- 2 cloves garlic, , finely minced
- 1/4 cup freshly chopped dill
- 1 teaspoon coarse salt
- 1 teaspoon pepper
Instructions
- To a large bowl, add the chopped celery, diced apple, diced cucumber, a bunch of finely chopped parsley, a handful of micro greens, diced Medjool dates, and chopped toasted pecans. Toss well to combine, and unstick any chopped dates that are clinging to one another.
- In another mixing bowl (or large measuring cup with a spout) add the mayonnaise, avocado oil, lemon juice juice, pure maple syrup, freshly grated Parmesan, minced garlic, freshly chopped dill, coarse salt, and pepper. Whisk until smooth.
- Pour dressing over the salad and toss to coat. Serve immediately.

How To Make Apple Date Celery Salad Step By Step

- Make the salad. In another mixing bowl (or large measuring cup with a spout) add 1/2 cup mayonnaise, 1/4 cup avocado oil, juice from 2 large lemons, 2 teaspoons pure maple syrup, 1 & 1/2 cups freshly grated Parmesan, 2 finely minced garlic cloves, 1/4 cup freshly chopped dill, and 1 teaspoon each coarse salt and pepper. Whisk until smooth.

- Assemble and serve. Pour dressing over the salad and toss to coat. Serve immediately.

What To Serve With Apple Date Celery Salad
With all the greens and fresh flavors, this salad just begs to be enjoyed in the summer! I love to pair it with grilled meats, like chicken breast or steak. It would also be a great option for a picnic if you’re craving something a little different.
Proper Storage
Apple date celery salad is best enjoyed right away, but can be stored in an airtight container in the fridge up to 2 days. Give it a good stir before enjoying!

Hi Stephanie! Microgreens are young seedlings of edible vegetables and herbs. They’re usually located near the lettuce or Alfalfa sprouts in the produce section. If you do a quick Google search, you can get a visual.

Looks like a great salad but I can not do dairy. Any suggestions for the parm? Not a great fan of ‘pretend’ parm so curious what you feel the parm adds taste (or texture?) wise, as to whether it could just be left out?

The parmesan definitely adds flavor. I don’t know of a proper non dairy sub for this salad. You could probably leave it out, but it’s a key ingredient, so I can’t vouch for the taste or texture of the dressing without it.
