Easy Almond Joy Stuffed Dates

These almond stuffed dates are such a great snack – they taste like an Almond Joy candy bar, which is one of my favorite candy bars. This is my latest recipe turning the candy bar into a healthy treat, joining my Almond Joy energy bites & Almond Joy yogurt parfaits) and we love them.

Medjool dates are stuffed with almond butter and a whole almond, then dipped in chocolate and topped with coconut flakes. Medjool dates are naturally sweet, which gives these a dessert-like quality without adding sugar, and the chocolate, almonds, and coconut give you all the flavors of the classic candy bar.

  • Medjool dates – Medjool dates are larger than other varieties and have a sweet, caramel-like flavor.
  • Almond butter – A creamy filling that offers some almond flavor.
  • Whole almonds – To stuff in the center of the dates.
  • Semi-sweet chocolate – You can use semi-sweet chocolate chips or chopped chocolate. Your choice.
  • Coconut oil – Helps the chocolate melt and harden properly.
  • Sea salt – Adds a nice contrast to the sweetness.
  • Coconut flakes – A key ingredient for this almond joy dessert.

How to Make Almond Joy Stuffed Dates

Here’s how to make these easy almond stuffed dates.

  1. Stuff the dates with almond butter. Cut a slit in each date lengthwise to remove the pit. Fill with 1/2 teaspoon of almond butter and a whole almond. Press the sides together to enclose. Set aside.
  2. Melt the chocolate. Melt the chocolate with the coconut oil in the microwave in 15 second increments, until smooth and shiny.
  3. Dip the dates. Lower each date into the chocolate using fork tines. Use a spoon to cover it completely in chocolate, then tap on the side of the bowl to release any excess chocolate. Transfer to a parchment paper lined baking sheet.
  4. Add the coconut. Top each chocolate covered date with sea salt and coconut flakes. Repeat with all remaining dates.
  5. Chill. Place the tray of chocolates in the fridge to set for at least 15 minutes. Then enjoy!

Tips & Variations

Here are a few tips for making your chocolate covered dates.

  • Don’t cut through the dates. You want to create a slit in the dates but not slice through them completely.
  • Stir the chocolate frequently. Melt the chocolate in 15 second increments and stir between each one, to avoid burning the chocolate.
  • Add the coconut before the chocolate sets. Make sure to add the chocolate and sea salt as you dip each individual date and before the chocolate hardens or the coconut won’t stick.
  • Make Snickers stuffed almonds. Prefer Snickers to Almond Joy? You can make these chocolate covered dates more like a Snickers candy bar by replacing the almond butter with peanut butter, the whole almonds with peanuts, and leave off the coconut flakes.

How to Store Stuffed Dates

These almond stuffed dates should be stored in the fridge in an airtight container and will keep up to a week. If desired, you can also freeze them. Medjool dates freeze very well, as do the other ingredients. Note that the salt may melt as they thaw.

These Almond Stuffed Dates taste like an Almond Joy candy bar, but are actually a healthy, guilt-free snack! So easy to make and just sweet enough that they can pass for dessert too.

Ingredients 

  • 10 medjool dates
  • 2 tablespoons almond butter
  • 10 whole almonds
  • 1/2 cup chopped semi-sweet chocolate or chocolate chips
  • 1 teaspoon coconut oil
  • sea salt
  • coconut flakes

Instructions 

  • Cut a slit, lengthwise, in each date and remove the pit.
  • Fill each date with almond butter (about 1/2 teaspoon) and press in a whole almond. Then gently push the sides together to enclose. Set aside.
  • Place the chocolate and the coconut oil in a microwave safe bowl and melt in the microwave in 15 second increments, stirring between each, until smooth and shiny.
  • Working one at a time, place a date onto fork tines and lower into the chocolate. Use a spoon to coat the date until completely covered. Tap on the side of the bowl to release any excess chocolate.
  • Transfer to a parchment-lined baking sheet.
  • Sprinkle with a touch of sea salt and coconut flakes.
  • Repeat with all the dates.
  • Place in the fridge to allow the chocolate to set, about 15 minutes. Enjoy!
