These Almond Stuffed Dates taste like an Almond Joy candy bar, but are actually a healthy, guilt-free snack! So easy to make and just sweet enough that they can pass for dessert too.

Ingredients
10medjool dates
2tablespoonsalmond butter
10whole almonds
1/2cupchopped semi-sweet chocolate or chocolate chips
1teaspooncoconut oil
sea salt
coconut flakes
Instructions
Cut a slit, lengthwise, in each date and remove the pit.
Fill each date with almond butter (about 1/2 teaspoon) and press in a whole almond. Then gently push the sides together to enclose. Set aside.
Place the chocolate and the coconut oil in a microwave safe bowl and melt in the microwave in 15 second increments, stirring between each, until smooth and shiny.
Working one at a time, place a date onto fork tines and lower into the chocolate. Use a spoon to coat the date until completely covered. Tap on the side of the bowl to release any excess chocolate.
Transfer to a parchment-lined baking sheet.
Sprinkle with a touch of sea salt and coconut flakes.
Repeat with all the dates.
Place in the fridge to allow the chocolate to set, about 15 minutes. Enjoy!

Make Snickers stuffed almonds. Prefer Snickers to Almond Joy? You can make these chocolate covered dates more like a Snickers candy bar by replacing the almond butter with peanut butter, the whole almonds with peanuts, and leave off the coconut flakes.
