Crispy Air Fryer Egg Rolls

We love recreating some of our favorite take-out recipes at homeโ€ฆand sometimes making them healthier. These Air Fryer Egg Rolls are reason #57 to go get yourself an air fryer. I thought mine would just be another appliance that sits on the counter and collects dust, but man, I sure do use it a lot.

I took traditional deep fried egg rolls and air fried them. No oil, no splatters, no mess, and delicious! Light and golden on the outside, with a hot and tender, flavorful filling inside – every bite is crunchy and fabulous.

Shrimp Egg Roll Recipe

You can make egg rolls with all sorts of filling. These air fryer egg rolls include a mix of shrimp and cabbage. Here’s what you’ll need:

  • Shrimp: For this recipe, we’re using cooked shrimp, finely chopped.
  • Coleslaw: You’ll need coleslaw mix with cabbage and carrots – just the vegetables, no sauce. For ease, we buy it pre-packaged, but you can chop it up yourself, if preferred.
  • Soy sauce: We always use low-sodium soy sauce to limit the salt in our meals.
  • Rice vinegar: Adds a nice zingy flavor.
  • Sesame oil: For that characteristic umami Asian flavor.
  • Ginger and Garlic: For aromatics and flavor. Use fresh.
  • Egg roll wrappers: Found in the produce section, usually near the coleslaw mix and bagged lettuces.
  • Nonstick cooking spray: This takes the place of oil and used to help crisp the egg rolls.

Tips for Air Fryer Shrimp Egg Rolls

Air Fryer Egg Rolls are really simple, but here are a few tips for optimal results:

  • Preheat your air fryer: Just as you would your oven, preheat your air fryer before placing the egg rolls in the basket.
  • Don’t over-fill: Placing too much filling in your wrapper can cause them to tear or not seal shut.
  • Seal them properly: Make sure the rolls are sealed properly, so the filling doesn’t come out. We just use water to dampen the edges.
  • Lay egg rolls in a single layer: To make sure the egg rolls cook evenly and get crispy, you donโ€™t want to overcrowd the air fryer basket or have the rolls touching. This usually means, youโ€™ll need to cook in batches.
  • Flip them: Flip and spray each egg roll during the cooking time to make sure they get crispy on both sides.

How to Make Shrimp Egg Rolls in Air Fryer

Itโ€™s so easy to make this shrimp appetizer in just a few steps. Hereโ€™s a brief summary:

  • Make the filling: Cook the filling ingredients in a nonstick skillet. Drain off any liquid and pat dry with paper towels. Set aside to cool.
  • Build the egg rolls: For each egg roll, place a wrapper on a clean work surface with a corner pointed toward you. Spoon 1/4 cup of the shrimp filling onto each wrapper just below the center. Fold bottom corner over filling, tucking it underneath. Fold in opposite corners and roll up. Moisten top corner with water; press firmly to seal.
  • Preheat your air fryer: For this recipe, preheat your air fryer to 375 degrees F.
  • Place rolls in basket: Spray the air fryer basket, then place as many egg rolls that can fit in a single layer, without touching.
  • Air fry: Lightly spray the tops of the egg rolls with cooking spray, then air fry, flipping once, until golden and crispy!
  • Serve: Enjoy with a complimentary dipping sauce (suggestions below.)

How long to cook egg rolls in air fryer? These egg rolls air fry at 375 degrees F for 5 minutes, then turn rolls over and cook another 2-3 minutes. (IMPORTANT NOTE: All air fryers cook differently so keep an eye on the egg rolls and use your best judgement when it comes to cook times. We highly suggest doing a test run with just a couple egg rolls and then adjust the time/temp, if necessary.)

Make Ahead and Freezing Homemade Air Fryer Egg Rolls

This air fryer egg roll recipe only serves 8, so we highly recommend making a double (or triple) batch and freezing some for later, so you have egg rolls fast!

  1. Double or triple the filling and number of wrappers. Roll the egg rolls as directed.
  2. Place the egg rolls on a cookie sheet in a single layer. Transfer to the freezer and flash freeze until solid, about an hour. (This will prevent the egg rolls from sticking together while in the freezer long term.)
  3. Transfer the egg rolls to a resealable freezer safe plastic bag and store in the freezer for up to 2 months.
  4. To cook, remove the egg rolls from the freezer and place in the preheated air fryer, spraying the outside wrappers with nonstick spray. Cook at 375 degrees and add an extra 1-2 minutes per side till heated through.

What to Serve with Shrimp Egg Rolls

Serve these egg rolls as appetizers or pair them with some of our other Chinese favorites like Fried Rice, Chicken Stir Fry, Beef Stir Fry, or Sesame Noodles for a complete meal. If serving as an appetizer, they go perfectly with our Sweet Chili Sauce or Teriyaki Sauce. You can also enjoy them with sweet and sour sauce, soy sauce, or hoisin sauce.

Ingredients 

  • 8 ounces cooked shrimp, , finely chopped
  • 4 cups packaged coleslaw mix, (with cabbage and carrots), finely chopped
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 2 teaspoons grated fresh ginger
  • 1 clove garlic, , finely minced
  • 1/4 teaspoon salt
  • 8 egg roll wrappers
  • Nonstick cooking spray
  • Sweet chili sauce, , for serving

Instructions 

  • In a large nonstick skillet over medium-high heat, combine the shrimp, coleslaw, soy sauce, rice vinegar, sesame oil, ginger, garlic, and salt. Cook and stir for about 3 minutes until coleslaw has softened. Drain off any liquid and pat dry with paper towels. Set aside to cool.
  • For each egg roll, place a wrapper on a clean work surface with a corner pointed toward you. Spoon 1/4 cup of the shrimp filling onto each wrapper just below the center. Fold bottom corner over filling, tucking it underneath. Fold in opposite corners and roll up. Moisten top corner with water; press firmly to seal.

  • Arrange the rolls in a single layer, without touching, in air fryer basket (cooking in batches, if necessary.) Spray the tops of the rolls with nonstick spray.
  • Cook 5 minutes. Turn egg rolls over, lightly mist again with cooking spray, and cook another 2-3 minutes or until golden and crispy.
  • Serve with the sweet chili sauce.
