It’s funny how I whine about the onslaught of pumpkin recipes coming way too soon, and yet I cannot wait to post all my Halloween ones – maybe that’s because I start working on them in July. So by the time September rolls around, it doesn’t seem early to me.
Plus, I’m always keeping in mind my best friend Heather’s daughter, who is a Halloween baby. I mean, she’s got party planning to do!
Orange and chocolate pair well together in this easy and fun cake. Haley said it reminded her of orange sherbet. Can’t find the candy corn pumpkins? Use regular candy corns, or Halloween sprinkles instead.

Halloween Poke Cake
Prep time: 15 minutes
Cook time: 30 minutes
Chill time: 1 hour
• 1 package (16 ounce) Fudge Marble Cake (I used Duncan Hines)
• 3 large eggs
• 1 cup club soda (or water)
• 1/3 cup vegetable oil
• 2 packages (3 ounces each) orange gelatin
• 1 cup boiling water
• 1/2 cup cold water
• 1 container (12 ounce) whipped chocolate frosting
• candy corn pumpkins, for topping
Grease a 13×9 inch baking pan and prepare the cake according to package directions. Cool on wire rack for 1 hour.
In a small bowl, dissolve gelatin in boiling water; stir in cold water immediately afterward before the gelatin can harden. With a wooden skewer, poke holes in the cake 2 inches apart. Slowly pour the gelatin over the cake. Refrigerate for 2-3 hours.
Spread frosting over the cake; refrigerate until ready to serve. Cut into squares and top each one with a candy corn pumpkin.
