If you love pie, s’mores, and mini desserts, you”l love these S’mores Hand Pies. Bonus, they’re made in an air fryer!
No one knows for certain who invented the s’more, but they gained major attention after being published in Tramping and Trailing with the Girl Scouts in 1927. Loretta Scott Crew made them by the campfire for her troop, and is credited with the recipe. Thanks, Loretta!
S’mores Hand Pies Recipe
Nothing complicated or fancy here. Just a simple, no fuss treat. Not only are these hand pies easy to assemble, but they only require 5 ingredients and they’re ready in 20 minutes!
- Pie Crust: Our homemade pie crust is recommended, but you can absolutely use store-bought refrigerated pie crust for convenience.
- Chocolate: A finely chopped up chocolate bar or mini chocolate chips both work.
- Marshmallows: You’ll need miniature marshmallows.
- Graham crackers: Crushed up graham crackers are part of the filling and also sprinkled on the outside, giving the pies a nice crunch in every bite.
- Butter: Melted butter is basted on the outside crust, which makes the hand pies golden and delicious!
- Marshmallow cream (for serving): This is purely optional, used to dip your hand pies in…but YUMMY.
- Chocolate Sauce (for serving): Also optional, but why not!
Recipe Notes
- Re-roll the dough scraps: You can roll out any excess dough scraps and if there’s enough, form another hand pie.
- Don’t overfill: Be careful not to pile in the filling or the seal can come undone.
- Crimp the edges: Make sure to securely crimp the pie crust edges together, so the filling doesn’t leak.
- My marshmallows completely dissolved in the air fryer! A marshmallow is mainly sugar so when it’s brought to heat, a lot of it will start to dissolve. They still add flavor and extra sweetness to the pies.
- Bake them in the oven instead: Don’t have an air fryer? No problem. Follow the directions, but instead of placing them in an air fryer, simply place on a parchment lined baking sheet. Bake in a 400 degree F preheated oven for about 20 minutes or until golden brown and filling has melted. (Start checking halfway through to make sure they’re not browning too fast. If so, tent with foil.) Let cool for 10 minutes before serving.
Make Ahead / Storing Instructions
You can serve these while they’re warm or room temperature. Or store them until you’re ready to serve.
Store Baked and Cooled Hand Pies: store in an airtight container in the refrigerator for up to 3 days. Or frozen for up to 2 months (Thaw in the refrigerator, then bring to room temperature before eating.)
Store Assembled and Unbaked Hand Pies: can be tightly covered and refrigerated up to 2 days ahead or tightly wrapped and frozen for up to 2 months. Frozen hand pies can go directly into the oven or air fryer (no need to thaw first), but they will require extra cooking time.
Air Fryer Notes
This hand pie recipe was made using a Phillips model Air Fryer with a basket and requires preheating. If you own a different model air fryer (such as Ninja, NuWave, Dash, etc.), I would suggest doing a test run with just a single hand pie and then adjust the time/temp, if necessary. Air fryers are all similar, but just like ovens, cooking times can vary. My air fryer is also small. If yours is bigger than 3 quart, you can cook more than 2 hand pies at a time, as long as they’re not touching at all.

S’mores Hand Pies {Air Fryer}
Ingredients
- 14.1 ounce refrigerated package pie crust (2 crusts) or double my homemade pie crust recipe!
- 2 bars chocolate , broken into tiny pieces
- 1/2 cup mini marshmallows
- 3/4 cup crushed graham crackers , divided
- water
- 2 tablespoons salted butter , melted
- Chocolate sauce for dipping, optional
- Marshmallow cream for dipping, optional
Instructions
- Remove pie crusts from packaging and allow to come to room temperature, per package instructions.
- Cut the pie crust using a 3-inch cookie cutter, making sure to keep them as close together to get more pies out of it.
- In a medium mixing bowl, add the chocolate pieces, marshmallows, and half of the graham cracker crumbs; stir to combine.
- Scoop about one tablespoonful of the marshmallow mixture into the center of half of the cut-out pie crusts.
- Dip your finger into a little bit of water and run your fingers around the outer edge of the crust. Top each pie with the second crust and press them together. Gently press the edge of a fork around the edge of the pies to seal the edges.
- Brush the melted butter over the top of the pies, sprinkle the reserved graham cracker crumbs over the top.
- Preheat the air fryer to 350 degrees F for 5 minutes. Spray the air fryer basket with nonstick cooking spray.
- Place 2-4 pies (depending on the size of your air fryer) into the basket. Air fry for about 10 minutes or until the crust is golden brown and filling has melted. Carefully remove and transfer to a wire rack to cool. Repeat with remaining pies. (If your air fryer basket is large, you can cook more than 2 at a time as long as they are not touching at all.)
- Serve with chocolate sauce or marshmallow cream for dipping!
