I love my 5-ingredient peanut butter cookies. But sometimes when the craving hits, I just don’t want to make a full batch. That’s where these peanut butter cookies for 2 comes in! It’s a little different from that recipe, using butter and eggs, but the end result is still soft, chewy peanut butter cookies. The best part is that they’re ready in just 15 minutes. They can be made in the oven or air fryer – your choice.

Helpful Tips

  • Use the right peanut butter. For optimal results, use a commercial peanut butter brand like Skippy or Jif. Natural peanut butter contains too much oil and will cause the cookies to spread too much.
  • Measure accurately. Single serve cookies are not very forgiving, so you can’t “measure with your heart” so-to-speak. Make sure you’re not using the whole egg, you don’t use extra vanilla, butter, or flour, etc. Follow the recipe EXACTLY.
  • Add the criss-cross pattern. The criss-cross pattern on these single serve peanut butter cookies is not just for appearances. It helps flatten them enough to bake evenly.

This Peanut Butter Cookies for 2 recipe is the perfect way to satisfy that sweet tooth craving. 2 soft, chewy cookies in just 15 minutes!

Ingredients 

  • 1 tablespoon unsalted butter, room temperature
  • 3 tablespoons creamy peanut butter, (such as Skippy or Jif – see note)
  • 4 tablespoons brown sugar
  • 1 large egg yolk, (just the yolk!)
  • 1/2 teaspoon vanilla
  • 3 tablespoons all-purpose flour
  • 1/8 teaspoon salt
  • 1/8 teaspoon baking soda
  • granulated sugar, for rolling

Instructions 

  • Preheat the oven to 350°F and line a baking sheet with parchment paper.
  • Combine unsalted butter, creamy peanut butter, and brown sugar in a small bowl.
  • Add egg yolk and vanilla extract and mix well.
  • Add flour, salt, and baking soda. Use a rubber spatula to fold everything together until smooth and no streaks of flour remain.
  • Use a 1.5-ounce cookie scoop to scoop out two large portions. Knead together with your hands until each portion is smooth with no cracks.
  • Roll the cookie dough balls in some granulated sugar.
  • Place on the prepared baking sheet two inches apart.
  • Gently press down with the back of a fork and then press again from the opposite direction, to form a criss-cross pattern on top.
  • Bake for 11 minutes or until the cookies have puffed up and are set on the edges but are still slightly gooey in the middle.
  • Allow to cool completely before eating! Enjoy!

Notes

Avoid natural peanut butters – they contain too much oil and cause the cookies to spread. Also make sure to follow the recipe EXACTLY. Single serve recipes are not very forgiving. Tips, storage, and air fryer directions are included in the article.

How to Make Peanut Butter Cookies for 2 Step by Step

Proper Storage

Since this recipe makes just two cookies, it’s unlikely there will be leftovers – even if you’re the only one eating them! That said, they can be stored on the counter in an airtight container (or a Ziploc bag) for 1-2 days.
