My Paul. Cooking is just not his thing. When we were first dating, he made Mac and Cheese – I didn’t have the heart to tell him that the pasta isn’t supposed to be that soft. And his burnt grilled cheese was less than desirable. And no, you probably don’t want to mix the left over fish curry with the left over spaghetti and meatballs. Oy.
(He can, however, mow the lawn, build furniture, do a mean load of laundry, clean bathrooms, produce an awesome video, and has saved us thousands of dollars over the years fixing electrical and plumbing problems. So I’d say it’s more than a fair trade!)
There is one thing, though, that he makes quite well. Steel-cut oatmeal, of all things.
He sometimes makes oatmeal for the kids on the weekends, usually adding in dried fruit and pecans. They love it.
This last time, I took control (big surprise) and gave it a different twist. A dessert-like twist (another big surprise)…with chocolate and almonds.
This Chocolate-Almond Steel Cut Oatmeal is still on the healthier side from those steel cut oats and sweet banana. But the kids can think it’s dessert oatmeal from the chocolate and cream – whatever works!

Chocolate-Almond Steel Cut Oatmeal
Ingredients
- 1 cup Steel Cut (Quick and Easy) Irish Oatmeal
- 1/2 teaspoon kosher salt
- 1 tablespoon unsweetened cocoa powder
- 1/3 cup brown sugar
- 1 large ripe banana , sliced
- 1/4 cup chopped almonds
- 1/4 cup chopped semi-sweet chocolate
- 1/4 cup heavy cream
Instructions
- In a medium pot, bring 3 cups water to a boil. Add oats and salt; reduce heat and simmer, uncovered, for about 6 minutes, stirring frequently.
- Remove from heat and stir in cocoa powder and brown sugar.
- Divide among 4 bowls, topped with sliced banana and 1 tablespoon each of heavy cream, almonds, and chocolate pieces.

I don’t think I’ve ever had actual steel cut oatmeal. THIS may be the perfect reason to try it. Who ever said you can’t have chocolate for breakfast? Plus, because there’s bananas and whole grains, it’s healthy. ;)
I’m wondering how Paul feels about all of this? And the kids? Are they going to make him change his recipe? I’m thinking yes. Did he get a tinge jealous? I can almost see the steel-cut cook-off video now….
I’m a HUGE fan of the 5 minute quick and easy steel cut stuff. The texture is still great and I’m guessing it’s pretty healthy like the slow cooking stuff, right? You know what else is healthy? A little cocoa and cream and chocolate in our weekends.
Everything in moderation, right? Ooooor in my case, as much chocolate and cream as possible ;-) I use the regular steel-cut oats, as well. I actually bought the Quick and Easy on accident. BUT they look the same and taste the same, so I’m not quite sure what the difference is. I’d be hard pressed not to use them every time now. (And re: Paul…he knows I’m a control freak, so he just rolled with it and let me do my thing!)
I bought the quickie (McCann’s right?) by accident too (!) one time and now if I buy the regular it’s the accident. I can’t tell the difference but I’ve never had both in my house at the same time to see. One thing I liked about the regular was a heftier crunch, but that was only/probably because I didn’t give it enough time to cook.

The.Boy. can’t cook anything either (and we are ALWAYS fighting about how al dente pasta should be. I’m on the MORE al dente side. He’s on the MUSH side.) but he’s pretty handy so it’s okay. Maybe he has some secret cooking talents we don’t even know about though…I’m crossing my fingers for him being super at pie crusts.
You know who wants dessert for breakfast? ME. This looks awesome.

Want. Wantwantwant. That would be a weekend post-long-run bowl of happiness. I usually heat up a double bowl of baked leftover from the week but this… yes.
:D :D I had a line in my post about it being pretty healthy, but deleted it. I knew I’d get a host of people throwing things at me “It’s got chocolate! It’s got cream! It’s got brown sugar!” BUT I do think it is, once you portion it out, those ingredients are so minimal.
I swear, I loved this so much. SO MUCH. I think I might actually make this right now for lunch…

This is quite possibly the best oatmeal recipe I have ever seen. Seriously going to make this. We have oatmeal every weekend, and it needs to be more chocolate-y lots more chocolate-y.
