Mini Caprese Skewers – your favorite caprese salad served on a skewer as an appetizer. Comes together in only 10 minutes!

We interrupt this regularly scheduled Fall program of apple cider and pumpkin muffins to bring you these caprese skewers.
I made these for Haley’s lunchbox last week and she came home all excited, begging me to give them to her for the rest of the school year. Well, I’m smart enough to know that her enthusiasm will wane, but I’ll take it while it lasts.
She was also animated about the little STAR single-serving vinaigrette packs – loving how they tasted, but equally concerned after telling me she got rid of the empty containers. (My kids have a propensity for losing far too many sweat jackets and also throwing away my Tupperware, so she anxiously waited for my response.) Great relief washed over her, when I explained they are disposable.
The single-serve packs are also perfect for work. Assemble these skewers ahead of time, then drizzle the vinaigrette on a few minutes before eating, so it soaks into the bread without making it soggy.
You could serve these as an appetizer, too. I hear it’s football season ;-)
Mini Caprese Skewers
Makes 6 for a snack
Prep time: 10 minutes
• 3 grape or cherry tomatoes, sliced in half
• 6 small fresh basil leaves
• 1 thick slice of day-old Italian bread, cut into 6 cubes
• 6 Ciliegine (small fresh mozzarella balls/pearls)
• 6 green olives
• 1 packet of STAR single-serving vinaigrette*
• wooden skewers cut into thirds
Thread one of each half tomato, basil leaf, bread cube, mozzarella ball, and olive onto skewers. Drizzle vinaigrette over each one a few minutes before serving.
*Note: this is equivalent to 2 teaspoons extra virgin olive oil and 2 teaspoons balsamic vinegar, combined.
