This Sheet Pan Potato, Apple, and Sausage recipe is a quick and easy all-in-one weeknight dinner that’s full of incredible sweet and savory flavor. I love to serve this with a side of sauerkraut and sour cream.

If the combination of apples, potatoes, and onions sounds odd, trust me – they work so well together! Make this sheet pan potato, apple, and sausage recipe once and you will make it again and again. The balance of sweet and savory is a flavor bomb and the all-in-one meal makes after-dinner clean up so quick. I usually serve it with sour cream and sauerkraut, but that’s optional.
Helpful Tips & Variations
- Use any sausage. I use links of chicken-apple sausage which pair really well with the sliced apple pieces and the rest of the ingredients, but any cooked sausage can be used in this recipe.
- Make the potatoes equal in size. Baby new potatoes are perfect for this recipe, since they don’t need to be peeled and they become tender, not mushy, when baked. Baby potatoes are usually pretty consistent in size, but if some are extra small, it’s better to halve those and quarter the big ones. They should all be roughly the same size for even cooking.
- Apple. Honeycrisp apples are my preference for this sheet pan dinner. They have a good balance of sweet-tart flavor that pairs with the more savory elements, but feel free to use a different sweet apple.
- Customize the seasoning. Feel free to add any other herbs and seasonings to this sheet pan dinner. Rosemary can replace the thyme, of preferred and whole cloves of garlic can also be added for flavor.
- Add more veggies. Feel free to add other ingredients like sweet potatoes, carrots, squash, and cabbage. Just make sure you have a big enough sheet pan since you want everything in a single layer, so the ingredients roast not steam.

Sheet Pan Potato, Apple, and Sausage
Ingredients
- 4 links cooked chicken-apple sausage , cut into 2-inch pieces
- 12 ounces (about 9) baby new potatoes , quartered
- 1 small sweet onion , cut into 6 wedges, roughly separated
- 1 small Honeycrisp apple , sliced into 1/2-inch thick half moon pieces
- 3 tablespoons olive oil
- 1 tablespoon whole grain or spicy brown mustard
- 1/2 teaspoon coarse salt
- 1/2 teaspoon fresh cracked black pepper
- 3 sprigs fresh thyme
- sour cream , for serving, optional
- sauerkraut , for serving, optional
Instructions
- Preheat oven to 400. Coat a rimmed 15×10 baking sheet with nonstick spray.
- Place chicken-apple sausage pieces, potatoes, onion, and apple on the baking sheet. Drizzle the olive oil over the top, add the mustard, and sprinkle with the salt and pepper.
- Toss everything to coat well, then rearrange to an even layer. Scatter the thyme sprigs on top.
- Transfer to the oven and roast for 25 minutes until the sausage is charred and the potatoes and apple slices are tender.
- Enjoy with sour cream and sauerkraut on the side, if desired.

Truly, you could serve this sheet pan dinner without any sides as a meal itself. However, I like to serve my sheet pan potato, apple, and sausage with a side of sauerkraut and sour cream. The tangy, acidic flavors pair so perfectly with the sweet, savory flavors. Another option would be to serve it with a simple side salad for added veggies.
How To Store & Reheat Leftovers
- Fridge. Store leftovers in an airtight container in the fridge for 3 to 4 days.
- Freezer. Freezing this dish is not my preference since the potatoes, apples, and onion will get mushy once thawed. However, you can freeze leftovers if necessary. Allow to cool completely, then store in an airtight freezer-safe container. It will keep up to 2 months. Let thaw overnight in the refrigerator before reheating.
- Reheat. The easiest way to reheat leftovers is in the microwave until warmed through.
