Ingredients
4linksfully cooked chicken-apple sausagecut into 1 & 1/2-inch pieces
12ouncesbaby new potatoesquartered
1smallsweet onioncut into 6 wedges, roughly separated
1smallHoneycrisp applesliced into 1-inch thick half moon pieces
3tablespoonsolive oil
1tablespoonwhole grain or stone ground dijon mustard
1/2teaspooncoarse salt
1/2teaspoonfresh cracked black pepper
3sprigsfresh thyme
sour creamfor serving, optional
sauerkrautfor serving, optional
Instructions
Preheat oven to 400. Coat a rimmed 15x10 baking sheet with nonstick spray.
Place chicken-apple sausage pieces, potatoes, onion, and apple on the baking sheet. Drizzle the olive oil over the top, add the mustard, and sprinkle with the salt and pepper.
Toss everything to coat well, then rearrange to an even layer.
Scatter the thyme sprigs on top.
Transfer to the oven and roast for about 25 minutes until the sausage is charred and the potatoes and apple slices are tender.
Enjoy with sour cream and sauerkraut on the side, if desired.
