This Orange Beet Salad is so simple, with only a few main ingredients, but packs so much flavor and texture, plus isn’t it beautiful?? Lovely enough for any dinner party, but assembled in only 15 minutes for a super easy lunch or weeknight side dish.

Navel oranges
Red onion
Feta cheese
Toasted walnuts
Micro greens
Vinaigrette dressing
Recipe Variations
- Swap out the feta with goat cheese
- Replace the walnuts with pistachios
- Use fresh parsley or basil, instead of the micro greens

Orange Beet Salad
Ingredients
For the Salad
- 4 medium beets (roasted, peeled, and sliced)
- 2 navel oranges (peeled and sliced)
- several thin slices of red onion
- 1/4 cup crumbled feta cheese (or goat cheese)
- 1/4 cup roughly chopped toasted walnuts (or pistachios)
- micro greens (or roughly chopped fresh parsley or small basil leaves)
For the Dressing
- 2 tablespoons extra-virgin olive oil
- 2 tablespoons apple cider vinegar
- 2 tablespoons fresh orange juice
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- Salt and pepper , to taste
Instructions
- Arrange sliced beets and oranges on individual plates. Top with the onion, cheese, nuts, and whichever greens you're using.
- Place all of the ingredients for the dressing in a lidded jar and shake vigorously to emulsify.
- Drizzle dressing over the salad.
- Serve and enjoy!
