Ingredients
For the Salad

medium
beets
(roasted, peeled, and sliced)

navel
oranges
(peeled and sliced)
several thin slices of red onion
1/4
cup
crumbled feta cheese
(or goat cheese)
1/4
cup
roughly chopped toasted walnuts
(or pistachios)
micro greens
(or roughly chopped fresh parsley or small basil leaves)
For the Dressing

tablespoons
extra-virgin olive oil

tablespoons
apple cider vinegar
2
tablespoons
fresh orange juice
1
tablespoon
honey
1
teaspoon
Dijon mustard
Salt and pepper
, to taste
Instructions
Arrange sliced beets and oranges on individual plates. Top with the onion, cheese, nuts, and whichever greens you're using.
Place all of the ingredients for the dressing in a lidded jar and shake vigorously to emulsify.
Drizzle dressing over the salad.
Serve and enjoy!
