Easy Energy Balls Recipe

Energy balls – also referred to as energy bites, protein balls, power balls, and vegan truffles – are a great post workout boost or afternoon pick me up to tide you over until dinner time. They’re a delicious alternative to crackers and chips that leave you feeling satisfied, and are so easy to make.

Ingredients Needed

To make these almond joy no bake energy bites, you will need the following ingredients:

  • Almond butter – This helps bind the balls together. I have used both commercial creamy almond butter and natural creamy almond butter in this recipe, and I do prefer the commercial brands. There’s more flavor and less oil, which helps the balls hold their shape. However, natural does work. If using natural, make sure you mix it very well and also add in a pinch of salt. If your almond butter is runny, use a little less. You can also use peanut butter, if preferred.
  • Almonds – Gotta use lightly salted almonds if we’re making almond joy balls, right?
  • Coconut flakes – Sweetened or unsweetened coconut flakes may be used, but sweetened will give you the best flavor for this recipe and my preference for optimal results.
  • Mini chocolate chips – Keeping with our almond joy flavor profile, some chocolate is needed.
  • Vanilla – For added flavor.
  • Dash of salt – I add in a pinch of salt which boosts the other flavors.

How to Make Energy Balls

Making these almond joy energy bites is very easy in a few simple steps.

  1. Loosen the almond butter. Microwave the almond butter for about 15-20 seconds just until softened.
  2. Finely chop the almonds and chocolate. In a food processor, grind the almonds and chocolate chips until there are no more large chunks.
  3. Combine ingredients. Add the almond butter and process until smooth. Add in the coconut flakes, vanilla, and a dash of sea salt; pulse a few more times to combine.
  4. Form the balls. Scoop out mixture using a tablespoon sized cookie scoop; roll into balls. Then roll them in coconut flakes.
  5. Chill. Place on a baking sheet and refrigerator for about 15 minutes to harden a bit. Enjoy!

Tips for Success

  • The type of nut butter can make a difference. Nut butter is what binds the balls together. Not all nut butters will have the same results, though. Natural nut butters have extra oil and tend to be more runny, so if using a natural kind, you will likely need less of it or will need to add in a bit of almond flour. I would also recommend adding in a touch of salt, since they don’t have as much flavor as traditional brands.
  • Chop everything very fine. Grind the almonds and chocolate chips in a food processor very fine, so they are evenly incorporated into the dough, without any air pockets which can create crumbling.
  • Knead the dough balls. After scooping out portions, knead the balls so the mixture comes together and is smooth. This helps prevent crumbling later.

How to Store Energy Bites

Store energy bites in an airtight container in the refrigerator for up to 10 days. They also freeze well in a freezer-safe container up to 2 months. Thaw overnight in the fridge before eating.

These no bake Almond Joy Energy Bites are an easy 6-ingredient snack full of fiber, protein, and healthy fats. Plus, they’re small, portable, super delicious, and vegan so everyone can enjoy them!

Ingredients 

  • 1/2 cup creamy almond butter
  • 1 cup lightly salted almonds
  • 1/2 cup mini chocolate chips
  • 1 & 3/4 cups sweetened flaked coconut, , divided
  • 1 teaspoon vanilla
  • a dash of sea salt

Instructions 

  • In a small microwave-safe bowl, microwave almond butter for about 15-20 seconds just until softened.
  • In a food processor, grind the almonds and chocolate chips until there are no more large chunks. Add the almond butter and process until smooth. Add in 1 cup of the coconut, vanilla, and a dash of sea salt; pulse a few more times to combine.
  • Scoop out mixture using a tablespoon sized cookie scoop; knead until they come together and roll into balls using the palms of your hands. Then roll them in the remaining 3/4 cup coconut flakes.
  • Place on a baking sheet and refrigerator for about 15 minutes to harden. Enjoy!
