Easy Air Fryer Steak and Veggies

Steak in the air fryer is one of my new favorite ways to cook steak. Not including marinating time, this easy air fryer steak and veggies recipe is ready in just 20 minutes, and the steak bites are so tender, juicy, and flavorful.

The base of the marinade is similar to my favorite steak marinade recipe, with soy sauce and Worcestershire sauce for that savory umami base, but uses different seasonings. The mushrooms and peppers are marinated too, to ensure the flavor is in every single bite.

Air fryer steak bites and veggies make a super easy and deliciously hearty lunch or dinner that’s dairy free, high protein and low carb. I typically serve this over rice, but that is not necessary if you need this to remain a low carb meal.

Why You’ll Love These Air Fryer Steak Bites

  • Quick and easy. If you skip the marinating time, this comes together in under 20 minutes. But for best flavor, I do recommend marinating for at least 1 hour. Even better overnight, and then all you do is pop in the air fryer and it’s done in just 8 minutes!
  • Tender, juicy, and flavorful. The marinade in this recipe is simple but so tasty. It makes the steak truly mouth-watering. And the air fryer cooks the steak so there’s a nice char on the outside while staying tender and juicy inside.
  • Perfect filling lunch or weeknight dinner. Since the meat and veggies are cooked together, it’s an all-in-one meal. For an even heartier meal, you could serve with some rice or roasted potatoes.

How to Make Air Fryer Steak and Veggies

Here’s an overview of how to make these air fryer steak bites with veggies.
(Scroll down to the recipe card below for details and measurements.)

  1. Combine the ingredients. Toss everything together in a medium bowl, until the steak and veggies are coated.
  2. Chill. Cover and chill for at least an hour. Let stand at room temp before cooking.
  3. Air fry. Preheat your air fryer to 400F, spray the basket with cooking spray, and dump all the ingredients in (discarding the marinade). Cook for 5 minutes, shake, then cook for an additional 3-4 minutes.
  4. Enjoy. Enjoy on white rice, if preferred, for an easy lunch or dinner!

Tips & Variations

Here are a few tips for making this air fryer steak and veggies recipe, as well as some ways to customize it.

  • Marinate as long as possible. If you can marinate the steak overnight, you’ll have the absolute best results. While you can prepare it without marinating the steak, it will taste so much better if you do. Even an hour makes a huge difference.
  • Cut everything into equal sizes. Try to get the steak bites to be 1 inch and the peppers 2 inches so that everything cooks in an equal amount of time.
  • Customize the veggies. Feel free to use other colors of bell peppers or even add some onions or other veggies to the mixture.

Serving Suggestions

For a quick and easy meal, I typically serve these air fryer steak bites and veggies in a bowl over white rice. Cauliflower rice would be a great low-carb alternative. You could also serve them with roasted potatoes.

How to Store & Reheat Leftovers

  • Fridge. This is best the day it is prepared but leftover steak and veggies will last a couple days in the fridge in an airtight container.
  • Reheat. Reheat in the air fryer for 3 minutes or so, until the steak is reheated, or pop in the microwave. Keep in mind that the veggies will soften and the steak will be well-done, especially in the microwave.
