Instructions
Add all the ingredients to a medium bowl; toss to coat.
Cover and chill for at least 1 hour (the longer the better - overnight will get you the best flavor.) Remove from the fridge and let stand at room temp for 30 minutes before cooking.
Drain and discard marinade.
Preheat air fryer to 400F.
Spray the air fryer basket with cooking spray and dump the mixture into the basket. Cook for 5 minutes, shake, then cook for another 3 to 4 minutes. The meat should be tender and slightly charred.
Sprinkle with fresh chopped parsley. Serve on top of cooked white rice, if desired.
Notes
Marinate as long as possible. If you can marinate the steak overnight, you'll have the absolute best results. While you can prepare it without marinating the steak, it will taste so much better if you do. Even an hour makes a huge difference.Cut everything into equal sizes. Try to get the steak bites to be 1 inch and the peppers 2 inches so that everything cooks in an equal amount of time.Customize the veggies. Feel free to use other colors of bell peppers or even add some onions or other veggies to the mixture.
