I spend so much time reviewing other blogger’s cookbooks, it is beyond exciting (and somewhat surreal), to be telling you about mine today. Like, is this real life?
An enormous amount of blood, sweat, and tears goes into developing a cookbook that you pretty much feel as though you’ve given birth after you send your manuscript off to the publisher. What’s strange is that printed copies don’t actually hit the street until six months after you’ve finished writing it, so in reality I’ve been done with this since last April, waiting patiently for October to roll around for the release date.

WHAT IT’S ABOUT? Really an extension of all the recipes you’ve come to know and love from me here on Belly Full. There are a couple fan favorites repurposed in there, but it’s almost all new stuff! It’s filled with easy meals and desserts of all types. Recipes you can feel good about serving to your family, and that don’t leave you exhausted after cooking and cleaning. Food that’s fast, but not fast food – perfect if you’re always struggling with weeknight cooking!
WHAT KINDS OF RECIPES ARE INCLUDED? There is a chapter dedicated to chicken, pork, beef, seafood, meatless, soups, and desserts. Something for everyone!
WHAT IS THE LEVEL OF DIFFICULTY? Easy! The majority of recipes are made in 25-30 minutes, with a few that can take up to 45, but even those more lengthy ones are due mostly to baking time, not hands on time. If you’re comfortable in the kitchen and cook regularly, these recipes are a snap.
EASY AND FAST? THAT MEANS PROCESSED INGREDIENTS, RIGHT? Nope! Well, unless you consider canned beans and canned tomatoes processed. It’s 98% from-scratch cooking, with some short cuts. But, hey, if you like to soak your beans overnight and make your own chicken stock from scratch, go for it.
ARE THE INGREDIENTS EASY TO FIND? Yes! All of the ingredients used in the recipes can be found at your common grocery store.
DO I NEED SPECIAL EQUIPMENT? Nope! Just your basic lidded sauté pan, skillet, pots, casserole dishes, and baking sheets.
ARE THERE A LOT OF PICTURES IN THE BOOK? Yes! There is a picture for every single recipe.
