This recipe is made with chicken breasts cut into cutlets and a white wine sauce made with mushrooms and…you guessed it, Boursin cheese. Using garlic and herb Boursin cheese in this recipe adds incredible flavor and also makes the white wine sauce nice and creamy.

- Chicken – I use boneless chicken breasts in this recipe.
- Seasonings – You’ll need just salt, pepper, and garlic powder to season the chicken.
- Olive oil – Used to sauté the chicken and mushrooms.
- Mushrooms – I prefer cremini but other similar mushrooms will work as well.
- Garlic – For wonderful aromatics and flavor.
- White wine – Adds more depth of flavor than just using broth alone.
- Chicken broth – Creates the sauce for the Boursin cheese chicken.
- Boursin cheese – You’ll want a round block of the garlic and herb Boursin cheese. Other flavors can be used but will change the recipe.
How to Make Boursin Chicken
Here’s an overview of how to make this chicken with Boursin cheese.

- Cook the chicken. Cut the chicken in half so you get two thin cutlets. Season with salt, pepper, and garlic powder. Cook in the hot oil for 2 to 3 minutes a side until golden brown. Transfer to a plate and keep warm.
- Cook the mushrooms. Add the remaining oil to the pan and cook the mushrooms until golden brown. Add the garlic until fragrant.
- Make the sauce. Deglaze the pan with the wine, then add the chicken broth and Boursin cheese. Stir to form a smooth sauce and allow to gently bubble for a few minutes.
- Combine sauce with the chicken. Return the chicken back to the pan and cook another 2 minutes or so to warm through or until the chicken reaches an internal temperature of 165F.
- Enjoy. Serve the chicken right away with the mushroom-cheese sauce.
What If The Sauce Is Too Thin/Too Thick?
If you are having trouble getting the sauce to thicken, it most likely needs to be simmered a little longer. If it’s still not to your desired thickness, you can stir in 2 teaspoons of flour to the cream sauce. Alternatively, if it’s too thick, you can add a splash or two of chicken broth to loosen it up a bit.

Serving Suggestions
We typically enjoy Boursin cheese chicken over pasta with a side of fresh cooked green beans. Mashed potatoes or cooked rice would be other good options and you can swap the green beans for asparagus, brussels sprouts, roasted broccoli, or any other veggie desired.
How to Store & Reheat Leftovers
- Fridge. Leftover Boursin chicken can be stored in an airtight container in the fridge for 2-3 days. I don’t recommend freezing this dish as the sauce becomes grainy once thawed.
- Reheat. Reheat leftovers low and slow on the stovetop or in the microwave.

Ingredients
- 2 boneless chicken breasts (about 1 & 1/2 pounds total)
- 1 teaspoon coarse salt
- 1 teaspoon pepper
- 1/2 teaspoon garlic powder
- 1/4 cup olive oil , divided
- 8 ounces cremini mushrooms , sliced
- 2 cloves garlic , minced
- 1/4 cup white wine
- 3/4 cup low sodium chicken broth
- 5.2 ounce round block of Boursin garlic and herb cheese , cut into 4 pieces
- chopped fresh parsley , for garnish
Instructions
- Cut your chicken in half so you get two thin chicken cutlets. Season on both sides with the salt, pepper, and garlic powder.
- Heat half of the oil in a large nonstick skillet over medium heat. Once shimmering, add the chicken to the pan and cook until both sides are golden brown, about 2-3 minutes per side. Transfer the chicken to a plate and keep warm.
- Add the remaining oil to the pan with the mushrooms. Cook over medium-high heat until golden brown, about 3-5 minutes. Add in the garlic and cook until fragrant, about 20 seconds.
- Deglaze the pan with the white wine.
- Add in the chicken broth and Boursin cheese. Stir until a smooth sauce forms and allow it to gently bubble for 3 minutes. (See note.)
- Add the cooked chicken back into the pan and warm through, about 2 minutes, or until an internal temperature reaches 165F.
- Serve with some of the mushroom-cheese sauce and sprinkle with a bit of fresh chopped parsley. We typically enjoy this with pasta and a roasted vegetable.
