This easy Christmas dessert takes your basic rice krispie treats recipe, forms them into irregular sized pieces, then coats them in melted chocolate and cookie crumbs to mimic lumps of coal. I formed my treats into 25 lumps of coal – some small, some larger. But you can make more or less depending on the sizes you make. Have your kids help make them – since the lumps are purposefully misshapen, they can’t screw it up!

What in this Rice Krispie Treats recipe?
For this easy homemade Rice Krispie treat recipe, you’ll need just a few ingredients. Scroll below to the printable recipe card for details and measurements.
- Butter – I like salted butter for this recipe for a sweet and salty flavor, but unsalted butter is fine, too.
- Marshmallows – Mini marshmallows are recommended as they melt easiest. For best results, make sure they’re fresh.
- Rice Krispies cereal – You can use the name brand cereal or an off-brand copycat.
- Oreo cookies– The cream center is removed, then cookies are pulsed into crumbs to create the “coal” exterior.
- Chocolate chips – Melted semisweet chocolate chips add a delicious outer layer of chocolate to the rice krispie lumps of coal and help the cookie crumbs having something to stick to.
Proper Storage
It’s best to store these “lumps of coal” in an airtight container at room temperature. They will last for up to 3 days out on the counter before they start getting stale. I don’t recommend freezing them.

Lumps of Coal Rice Krispie Treats
Ingredients
- 3 tablespoons butter
- 2 cups mini marshmallows
- 3 cups Rice Krispies cereal
- 15 Oreos , cream removed
- 2 cups semi-sweet chocolate chips
Instructions
- Place parchment paper on a large baking sheet; set aside.
- In a medium pot over medium-low heat, melt the butter. Add in the marshmallows and stir until melted and gooey. Remove from the heat and pour in the cereal; gently mix to combine until completely combined.
- While the mixture is still warm, form into irregular sized lumps. (I formed my treats into 25 lumps of coal – some small, some larger. But you can make more or less depending on the sizes you make.) Set aside.
- In a food processor, process the Oreo cookies until finely ground into a powder like texture. Transfer to a bowl.
- Place the chocolate chips in a microwave safe bowl; microwave on high in 30 second intervals until melted.
- Place a Rice Krispies lump on a fork and dunk in the melted chocolate making sure it’s fully coated on all sides; tap the fork against the bowl to shake off any excess. Transfer to the parchment-lined baking sheet. Repeat until all lumps are coated.
- Put the baking sheet in the refrigerator for a few minutes so that the chocolate sets a little (but doesn’t harden.)
- Roll lumps in the ground Oreo cookies.
- Transfer to a clean piece of parchment paper to set completely and enjoy! (Note: if you want to actually put these treats into a child's Christmas stocking, make sure they're in a cellophane bag first, tied with a cute ribbon.)
