Ingredients
1largevidalia onion, peeled (about 12 ounces)
1 1/2cups panko breadcrumbs
1cupbuttermilk
1egg, beaten
1cupall-purpose flour
1teaspoonsmoked paprika
1teaspoongarlic powder
1/4teaspoononion powder
1/2teaspoonsalt
few turns of fresh ground pepper
olive oil cooking spray
Instructions
Cut the stems off both sides of the onion, then cut into 1/2-inch thick rounds.
To a medium bowl, whisk together the flour, smoked paprika, garlic powder, onion powder, salt, and pepper.
Add the buttermilk and egg to the seasoned flour; whisk to combine.
Pour the breadcrumbs into a separate bowl.
Dredge the sliced onions in the buttermilk-flour mixture and then the panko breadcrumbs. (Keep a moist kitchen towel handy to wipe off your fingers as they get sticky.)
Place the breaded onion rings on a plate then transfer to the freezer for 15 minutes (this will help keep the breading intact.)
If your air fryer requires preheating, set it to 370 degrees now.
Spray the air fryer basket with cooking oil.
Place the onions in the air fryer in a single layer without them touching. Cook in batches, if necessary.
Spray the tops of the onions with cooking oil.
Cook for 10-12 minutes at 370 degrees. (My onion rings did not need to be flipped. Check on yours and flip if necessary - both sides should be golden brown and crispy.)
