Ingredients
15ouncecan cannellini beans, drained and rinsed
2clovesgarlic, minced
2tablespoonsfresh lemon juice
1/3cupextra-virgin olive oil
1/4cuploosely packed fresh Italian parsley leaves
1/2teaspoondried oregano
1/2teaspoonKosher salt
1/4teaspoonfreshly ground black pepper
Instructions
Place all of the ingredients in the bowl of a food processor. Pulse until the mixture is smooth and thick.
Taste, and adjust seasonings if necessary.
Transfer the bean puree to a small bowl and serve with pita chips and freshly cut vegetables.
