Ingredients
1smallred bell pepper, ribs and seeds removed, cut into bite-sized pieces
3cupsbroccoli florets
6mediumbutton mushrooms, quartered
1tablespoonvegetable oil
1/4teaspooncoarse salt
1/4teaspoonpepper
1/8teaspooncrushed red pepper flakes
1/2of a 24 ounce bag breaded popcorn chicken(about 17-20 pieces - I love the Just Bare brand)
1/2cupbottled General Tso’s sauce
2scallions, diced
1/2teaspoontoasted sesame seeds, for serving
cooked white rice, for serving
Instructions
Preheat oven to 400. Coat a rimmed 15x10 baking sheet with nonstick spray.
Place one cut bell pepper, 3 cups broccoli florets, and 6 quartered mushrooms on the baking sheet. Drizzle 1 tablespoon vegetable oil over the top and sprinkle with 1/4 teaspoon salt, 1/4 teaspoon pepper, and 1/8 teaspoon red pepper flakes. Toss to coat. Move them to one side of the baking sheet.
On the other side of the baking sheet place 20 pieces breaded popcorn chicken in an even layer.
Transfer to the oven and bake for 23 to 25 minutes until chicken is cooked through (165F internally) and the vegetables are fork tender.
Remove from the oven and drizzle with 1/2 cup General Tso’s sauce.
Toss to coat and then sprinkle with diced scallions and sesame seeds.
