Ingredients
12ounces(6 ounces each) skinless cod fillets, thawed if frozen, cut in half lengthwise
Prepare noodles according to package directions; drain. Let cool slightly and toss with the egg.
Place flour in a shallow dish. Sprinkle fish with a dash of salt and pepper and the Cajun seasoning, then dredge fillets in the flour to coat. Shake off any excess.
Remove noodles from egg a few at a time, and wind around fish in an even layer, adding new strands until covered.
In a large nonstick skillet, heat oil and butter over medium-high. Add fish; cook 5-6 minutes per side until golden, crisp, and fish flakes easily. (Adjust your heat if the noodles are over-browning.)
Serve immediately and enjoy!
Notes
Fish should be completely dry. Keep patting the fish dry with several paper towels until the actual towels are dry.Try a different fish. I make this recipe with cod because it’s such a mild, almost flavorless fish. Plus, pretty inexpensive. But you can use halibut, mahi mahi, or snapper.Use other seasoning. We like the complex flavors and heat of cajon seasoning, but if it's not your thing, switch it up with your favorites spices.
