Ingredients
1/4cupgranulated sugar
3tablespoonscornstarch
1/8teaspoonsalt
4cupswhole milk, divided
1 & 1/2teaspoonsvanilla
1cupmilk chocolate chips, divided
4slicespound cake, cut 1/2-inch thick, thawed if frozen
2teaspoonscoconut oil
Instructions
In a medium pot, whisk together the sugar, cornstarch, and salt. Gradually whisk in 3 cups of the milk. Over medium heat, cook and stir until thickened and bubbly, about 2 minutes. Remove from heat and add in the vanilla and 2/3 cup of the chocolate chips; stir until melted and smooth.
Transfer soup to a large bowl; cover the surface with plastic wrap and chill for at least 4 hours or overnight.
For the cake croutons, arrange slices on a baking sheet and bake at 35F for 10-12 minutes, turning once, until browned. Let cool; cut slices into 1/2-inch cubes.
Place remaining 1/3 cup chocolate chips and the coconut oil in a small bowl and microwave on medium for about 1 minute, stirring once, until melted. Mix to combine.
To serve, stir remaining 1 cup of milk into the soup; ladle portions into bowls and top with the croutons. Drizzle melted chocolate on top.

You can add Kahlua or other preferred liquor as well, but I think Baileys pairs perfectly with the chocolate.Make it minty. For a refreshing peppermint chocolate soup, stir in some peppermint extract. At holiday time, I love to do this and then serve with candy canes for stirring.Make Mexican Chocolate Soup. If you want to spice things up, you can turn this into Mexican Chocolate Soup by adding in some ground chili powder or cayenne pepper. Cinnamon also pairs well with the ingredients.
