Ingredients
12largehard boiled eggs, carefully peeled so the whites don't tear
1/2cupmayonnaise
2teaspoonsspicy brown mustard
1tablespoonpickle relish(dill or sweet), optional
1/2teaspoonkosher salt
few grinds of black pepper
pinchcayenne pepper
smoked paprika, for dusting, optional
very thin scallions (or fresh chives), cut into strips
shredded romaine lettuce, optional, for serving
Instructions
Make the hard boiled eggs or purchase them at the grocery store.
Slice the eggs in half lengthwise. Carefully remove the yolks and place into a medium sized bowl. Using a fork, mash the yolks until it resembles very fine crumbs. Add in the mayonnaise, mustard, salt, pepper, cayenne, and pickle relish, and mix well until it’s completely smooth.
Spoon mixture into a plastic ziploc bag, pushing the mixture toward one corner. Cut off a small piece of that corner. Evenly pipe the mixture into the egg white halves.
Dust with a bit of smoked paprika.
Cut scallions and place on egg mixture to create football laces (very gently press down to adhere slightly, just so they don't fall off.)
Serve on a white platter with some shredded lettuce (to look like grass.) Fun!
