Ingredients
3/4cup(1 & 1/2 sticks) unsalted butter, softened to room temperature
1/2cupgranulated sugar
1/2cuppacked brown sugar
1largeegg
1 & 1/2teaspoonsvanilla extract
2cupsall-purpose flourspooned and leveled
1/2teaspoonbaking powder
1/2teaspoonbaking soda
3/4cupsemisweet chocolate chips
1/4cupbutterscotch chips
vanilla ice cream, for serving, optional
Instructions
Preheat oven to 350 degrees. Coat 6, 4 ounce ramekins with non-stick cooking spray.
In a large bowl, beat butter, granulated sugar, and brown sugar until creamy, then beat in eggs and vanilla. Blend in flour, baking powder, and baking soda, followed by the chocolate chips and butterscotch chips.
Scoop a heaping 1/4 cup of cookie dough into each ramekin. (Bag up all the extra portions and freeze for later - details above.) Place ramekins on a cookie sheet and bake for 18 to 20 minutes or until golden brown, but still a bit soft in the middle.
Let cool on wire rack for 5 minutes or so before serving. Top with vanilla ice cream while it's still warm, if desired.
Notes
Switch up the chocolate chips. Use semisweet chocolate chips, dark chocolate chips, white chocolate chips, butterscotch chips, peanut butter chips, or any combination.Include some nuts. Add chopped walnuts or pecans to the dough.Add candy or pretzels. M&Ms or Reese’s pieces, or crushed pretzels can be added as a salty, crunchy touch.Love peanut butter? Stir in a spoonful of peanut butter to the dough (and add some chopped Reese’s for extra flavor!)
