Ingredients
For the Dressing
½cupextra-virgin olive oil
¼cupred wine vinegar
1tbspfresh lemon juice
½tbsphoney
¾tspDijon mustard
2clovesgarlicfinely minced
1tspdried oregano
½tspsalt
¼tspground black pepper
For the Salad
6cupschopped romaine lettucerinsed and dried, or any greens work
2seasoned, roasted chicken breasts(sliced or chopped), rotisserie works too
Place a bed of lettuce on a white serving platter. Then top with rows of chicken, bacon, hard-boiled egg, avocado, cherry tomatoes, red onion, and blue cheese.
Garnish with chives and season with salt and pepper, to taste.
Make the dressing: Place all ingredients into a jar with a tight-fitting lid. Shake vigorously until well-blended and emulsified. Taste and adjust seasonings, adding more salt and pepper if necessary. Set aside.
Drizzle some dressing over salad just before serving and allow people to add more, if they like.
