Ingredients
2largeapples, sliced about 1/2" thick
12ouncebag dark chocolate chips, melted
2teaspoonscoconut oil
1/3cupcreamy peanut butter, slightly warmed
1/4cupfinely chopped peanuts
sea salt
Instructions
Wash apples and dry thoroughly. Slice into thin-ish (1/2") slices and remove any seeds/stem.
Add chocolate chips to a deep heat-safe bowl. Microwave in 30 second intervals, stirring well in-between, until completely melted. Stir in the coconut oil until smooth (this helps thin out the chocolate for easier dipping and also allows the chocolate to harden faster once finished.)
Pat each apple slice dry with a paper towel, then dip each one in the chocolate, using a spoon to coat the entire slice. Let excess chocolate drip off, then transfer to a parchment-lined baking sheet.
Quickly before the chocolate hardens, drizzle with peanut butter, then top with crushed peanuts and a bit of flakey sea salt.
Refrigerate just until solid, about 15 minutes. Enjoy!

Dry the apple slices. It's important to pat the apple slices dry with a paper towel so that the chocolate sticks to the apple.Don't skip the coconut oil. It helps thin the chocolate and also helps it harden quickly. The only exception is if you use candy melts or almond bark melting chocolate.Add the toppings quickly. Whether you're using the suggested toppings or your own favorites, be sure to add them quickly so that they stick to the chocolate before it dries.The sea salt is recommended. You don't have to include the salt, but it really does elevate the chocolate flavor and adds some oomph to the end result.Peanut allergies? Simply use a different nut butter and crushed nuts. Almonds are also great!
