In a separate bowl with a handheld mixer, beat together an 8 ounce brick of softened cream cheese and 14 ounces sweetened condensed milk.
Add in 12 ounces thawed Cool Whip and beat until just blended.
Blend the two mixtures together until well combined, then pour half of the mixture over the banana slices.
Repeat one more layer with another 7 & 1/2 graham crackers and the remaining cream mixture.
In a small plastic bag, crush the 1 remaining Graham cracker sheet; sprinkle over the top of the dessert.
Cover and refrigerate for at least 4 hours or overnight (note: the longer you let the dessert set, the softer the crackers will be.) Slice and serve!

Notes
You can replace the Cool Whip with an equal amount of homemade whipped cream beaten to stiff peaks, if preferred. If you don't like (or can't find) Graham crackers, Nilla wafer cookies or shortbread cookies can be used instead.
